more sauerkraut questions....

After reading the last thread on sauerkraut (where did it go?) I've decided I want to try making my own. This is one method of putting food by that I have never tried.

Q. #1 - can you make less sauerkraut with a smaller amount of cabbage, say less than 5 lbs.?

Q #2 - I've read that you are supposed to keep the kraut cool and dark while it is fermenting. Cool I can do in my laundry room that has no heat. Dark is a little harder to do; could I put a box or paper bag over the container of kraut while it is working?
