Thank you all for your support! The cookies turned out terrific and made a lovely addition to the meal. They made a chicken and vegetable dish in one of those clay tangines and served it over couscous. The cookies were great! I used the ginger snaps recipe and substituted the honey for the molasses (I usually use Plantation black strap). For my high-altitude changes I only added a scant 2tbsp more liquid even though I sometimes add 3-4. The dough seamed impossibly crumbly but when I squished it, it came together nicely. I used half the recommended amount of cloves, double the ginger (or did I triple it?) and added an uncalled for three tablespoons of cardamom. My secret ingredient was a 1/4 teaspoon ground coffee. All the online recipe sites suggested that Moroccan desserts used: almond, pistachio, coffee, tea, orange and orange blossom. I thought coffee sounded nice. And, now we are full to near bursting! Oh heck no, it'll be fine. In fact, I have some in the freezer right now, I often freeze part of the dough to bake later, so I don't have quite so many to lead me astray! My next experiment will be this week. I'm going to make a batch with brown sugar Splenda and replace some of the white flour with whole wheat. Elery's stepmom is diabetic and has been in and out of the hospital for the past several months with heart issues. I want to take her a treat, but I want it to be better for her, something that will fit into her food plan. So, we'll see. I have regular whole wheat and whole wheat pastry flour, so it should be interesting. Annie

Numerous attempts and misspellings made her grumpy and she'd yell at me about how to spell something. My favorite part - "And I sat down in the chair and stretched for a few minutes and I watched TV for another few minutes and I stretched again and I watched TV again so anyways my mom and I just wanted to tell you how delicious the cookies were." Apparently stretching & watching TV are an integral part of eating good cookies in my household. At least for a 9-year-old girl they are, LOL!

LOL, Bragu, thanks for the numbers. (grin) FOAS, I don't make them nearly as often as I used to, and the batch makes so many that I just freeze balls of dough on sheet pans then dump them into ziplock bags and keep them in the freezer. I was out, but I'm not any more, and now I have some for next week when Mother comes to stay for a few days. Plus my stepdaughter's husband says they are the best cookie he's ever had and they are coming to visit around Thanksgiving, so I can have some in the freezer all ready to bake.. Cloud Swift, I hope you heal up quickly and completely. Cookies are good medicine, be sure to eat lots! edie, I know that molasses cookies are kind of "old fashioned", but I still like them the best.
