More questions about a make-ahead tart

The main thing that was making me nervous about making an apple dessert to our christmas dinner, was all the peeling and slicing of the apples.
How far ahead of baking them in a pie can I prepare them?
And is just leaving them soaking in an acidic solution the way to go, or should I use something like fruit fresh?
