homemade marshmallows

I just made my first batch of homemade marshmallow, so far, so good. They are chilling right now waiting to be cut. I want to coat them with chocolate, at least part of them. I know I am supposed to cut them then coat in confectioners' sugar, but do I do that when I am chocolate coating them? I imagine it would make them easier to handle, but I wondered if the sugar would get into the chocolate & make it thicker or clump up.

Made home-made one time. Not a lot of work and nice results. I think the confectioner sugar (what my grandmother always called 10X) if mainly to cut down on the stickiness when handling?? When I made them, didn't COAT with chocolate but liberally dusted with cocoa powder

ngraham, I too have only made marshmallows once -- recently -- so thought someone more experienced would chime in. I would have said that the x-sugar coating would get into the chocolate and would make it thicker and sweeter, depending on how much x-sugar fell into it. I was going to suggest coating with x-sugar and then doing a drizzle of melted chocolate over the marshmallows.

klseiverd, coating with cocoa rather than x-sugar is a great idea! I found the homemade marshmallows to be icky-sweet and the cocoa powder would have made them more to my liking. I was the only one who thought they were icky-sweet though. :)

Beautiful job, tracey, I might have to try that. I've had very little luck making my own fondant, it doesn't handle or stretch nicely and it always tears when I try to cover the cake with it. Perhaps chocolate would be better..... And the roses are perfect, too! I used Fondarific to do Ashley's wedding cake. It handled like a dream, stretched like rubber and didn't tear. It tasted about like rubber too and didn't harden, it stayed soft. Three days after making that stupid crysanthemum, the edges just drooped right over when I tried to put it on the side of the cake. Arrrrggghhhh. And $71 for a 10 pound paid, by the time I paid shipping and everyone just peeled it off the cake and threw it away. Sigh. Yup, back to the fondant drawing board, I'll have to try adding some chocolate! Myabe the Princess will make the bear for me, I'm sure I don't have the artistic skill for that... Annie

Have you ever made and canned homeade applesauce? My folks are in the "needing heart healthy" treats category and they both love applesauce. I make it in half pint jars so it is good for just one or two servings. I make varieties too, like cranberry applesauce and blueberry applesace, and even strawberry applesauce. You can find gazillions of recipes on the web, I just wing it. To can, just ladle into sterlized canning jars, leave a half inch of air space, top with sterilized canning lids, and then put in a boiling water bath with water covering the tops of the jars over an inch, and boil for ten minutes to create a seal. Let cool for ten minutes more and then take out of the bath. Applesauce is one of the easiest things to can, because even with or without sugar, it is safe to can in a boiling water bath because apples are an acid fruit. That said, I always add a pinch of orange juice or lemon juice to my applesauce, I like the flavor better that way. I use and swear by golden delicious for applesauce, but I also like Empire and Cortland. Any kind of apple can make good sauce, some are just better than others. Good to know I'm not alone. Annie, the coconut ones are just meant to be eaten like candy, but I've also made plain and chocolate coated plain ones and cut them smaller for cocoa. December's Fine Cooking magazine has a cake on the cover that is topped with homemade marshmallows cut in tiny cubes. On another forum, someone is packaging homemade marshmallows along with a cube of chocolate (molded in an ice cube tray) speared on a candy cane stick. The idea is to heat a cup of milk, then stir with the chocolate cube/peppermint stick to melt the chocolate into the milk and top with the marshmallows - upscale cocoa. I'm going to try to remember that idea for next year. I'll take pictures! LOL Jane

They are so easy to make! I use the following recipe and it works every time. I never use egg whites; just corn syrup, sugar, water and gelatin. I oil the pan and when I turn out the marshmallows, I do it on a cutting board liberally sprinkled with confectioners sugar. Make sure you beat them for awhile because all the air you incorporate will pay off with fluffy marshmallows. Good luck. Jo Here is a link that might be useful: easy recipe for marshmallows

The marshmallows alone turned out perfect, much better than store bought & pretty easy. Coating with chocolate didn't work out, it did clump up & thickened fast. DH used to love a chocolate covered marshmallow cookie on the market, but swears they aren't nearly as good as they used to be. Thought I would try this as a treat for him, & maybe work out a cookie bottom later. After I tried dipping & messed up the chocolate, I also got the bright idea that drizzling would work better. It might have worked better if I hadn't coated them in the confectioners sugar, but you also have to be really quick or the chocolate can melt them. Didn't have enough chocolate to melt to try more. I did have some dipping chocolate, but that just didn't have the taste. Ghiardelli brand, but very lacking in flavor.
I think they will be a nice addition to my candy tray as they are & will try again another time.
