Peppi - Your Rouladen?

I've had a taste for Rindsrouladen (or Tote Maueslein as they're affectionately called in my family) since you mentioned them on another thread. Mine go something like this... beef (top round), s&p, mustard, slice of bacon, slice of pickle, couple slices of onion, rolled up, browned, braised in beef stock for a few hours. Sauce thickened. Meat, mustard, bacon, and pickle sourced from the German pork store. Bacon and onion go in uncooked.

Anything significantly different that you'd add or suggest? I'm happy with mine, but always open to trying new things.
