Nice idea! Not sure if i would trust it though, with torch heat. Not something in your collection of specials. A custard maybe? Not the same, but aren't they made stovetop, then chilled in containers? An easy caramel on top might be similar.

1 cup (2 sticks or 8 ounces) unsalted butter, cut into a few large pieces
1 cup packed light brown sugar
A big pinch of sea salt
1/2 teaspoon pure vanilla extract

"In a medium heavy-duty saucepan, melt the butter and brown sugar together, and stir it over medium heat until it begins to boil. Once it has begun boiling, let it bubble for three more minutes, stirring it well. It will thicken a bit as it cooks. Remove from the heat and add the salt and vanilla, and then quickly pour it over the matzo or crackers. YouâÂÂll want to spread it quickly, as it will begin to set as soon as it is poured."

Just one part of a recipe i make for the holidays. Might work. Could be cut in half.
But might need that heat, bubbly oven time.

Make a panna cotta in your lovely glasses - I wouldn't want to risk cracking them!

Oh the panna cotta is a great idea! Especially with a garnish of fresh fruit.

Saw a picture somewhere that hollowed out large-ish fresh strawberries, but the creme inside, and them bruleed the tops. looked wonderful and I bet tasted even better.

I also would be afraid of subjecting your lovely glasses to the heat of the torch. The panna cotta is a very good idea, or another flavor of mousse, like raspberry. The zabaglione would be nice too, maybe with a "finger" of shortbread....
