DD got an early Christmas present from her hubby, Ratio by Michael Ruhlman. It is fascinating to me. Each chapter covers ratios for a particular item, for example, one chapter is called "Quick Cakes," it covers how quick breads, muffins, pancakes, fritters, and popovers are similar ingredients but with different ratios.

Another chapter describes how pound cake and sponge cake are the same ingredients but different handling gives very different results.

Each chapter talks about the ratio of ingredients for the particular dish and then gives a simple recipe demonstrating the application. It isn't a recipe book, but rather a guide book to help you develop your own recipes - or at least help those of us who have previously been ignorant of how these things work.

DD may find it missing when I leave!
