Someone mentioned this the other day, but I don't think the recipe was posted. I thought I had copied it last year, but can not find it. Please post if for me. I bought the cranberries already!

Thanks
Tami

I made these last year - they're great! Thanks, Jenn!

Cranberry Lemon Cookies -Jenn
A wonderful cookie I discovered at Gail's Recipe Swap. They freeze well, but thaw them before adding icing. I posted this last year and got quite a few comments from people who said everyone loved them.

* 1/2 C butter
* 1/2 C sugar
* 1/3 C brown sugar
* 1/2 tsp. lemon zest
* 1 egg
* 2 tsp. vanilla
* 1 C flour
* 1 tsp. baking powder
* 1/2 tsp. cinnamon
* 1-1/2 C chopped pecans (I use walnuts)
* 1-1/2 C chopped fresh cranberries

Cream butter, sugars, and lemon zest. Beat in egg and vanilla.

Combine flour, baking powder and cinnamon. Gradually beat into butter mixture. Stir in nuts and cranberries.
Drop by teaspoonfuls 2 inches apart on greased baking sheets. Bake at 350F for 10 to 12 minutes, or until golden. Let cool slightly before removing to cooling racks. Frost when cool.
ICING: Whisk together 1 C confectioner's sugar, 2 Tbsp milk, and 1/4 tsp. lemon zest.

Thank you, Woodie! I probably won't ice them, as I shouldn't be eating them anyway, so that will keep a tiny bit of the carbs out of them! They just looked so good last year. I bought the cranberries, so hopefully, I can find time to make them.

Just FYI....these are good, I made them last week. but the are not really "lemony". Just in case you are looking for more of a lemon flavor.

Could you add a little lemon extract to boost that? Or just to the icing?

I made then the day before yesterday, but decided to change the lemon flavor to orange. I used a little orange oil instead of the lemon rind. They're good; I only tried them unfrosted, since I was freezing them.

Thanks for your recipe,woodie2.

The lemon flavor isn't very strong, but I don't think it's meant to be --- they are not "lemon cookies" or "lemon bars".

I have considered replacing the lemon with orange and may try that this time.

But without the icing, they're just not the same.
