I make fig pie from fresh figs, which is an entirely different thing. You can treat dried figs like raisins. Cut the plumped figs to raisin size and substitute accordingly (roll the cut edges in a little flour or sugar to make them easier to handle). That should give you a good idea for proportion. Figs have stronger flavor than raisins, so go easy or you'll drown the apple taste. Cloves might be a good addition, or even cardamom.

If you want to change to the filo, you could chop the apples and figs small, with some pistachios and/or almonds and/or pecans, add spices and some fig syrup, or simple syrup, or honey, and just spread it on the filo and roll it up. Brush the outside with a little sesame oil and bake, cool, slice. Or you could bake it flat. Or you could make a simple log if the filling is good and sticky. You don't have to do a full on baklava for it to be good. :)

Your halfway to mincemeat! Go find a mincemeat pie recipe and adapt it.

Hi - if you don't want the figs to get pasty, maybe just quarter or halve them?

& I make pies w/ raisins & dried fruits all the time - we like the mix of flavours & textures - fave is fresh apple & pear, w/ raisins. I do not presoak anything unless it's too hard & dry - usually the juices from the fresh fruit will rehydrate them during cooking. I'm also generous w/ lemon or lime juice to counter the extra sweetness of the dried fruits.

Report on my apple fig pie, I made it for New Year's dessert. I soaked the figs for a few days, and then mixed apple and fig, with a yummy crumb topping. But I have to say I didn't much care for the pie, the texture difference between the figs and apples was too varied for my taste. If I had to do it again I would mix the figs with some other dried fruit and use a cream filling with the crumble topping, so more of a tart than pie. Here's a link to the recipe I used for the filling. It tasted good though, putting walnuts in the crumble topping was a great idea. It's from the Valley Fig Growers Association, in CA.
