My sister got a recipe for prime rib that requires "Perrin of beef" and neither of us can find it (or exactly what it is). I'm guessing it's a concentrated beef flavoring. Does anyone know?
How is it used in the recipe? I wonder if it was actually referring to a "Baron of Beef". Baron/Perrin. Maybe someone heard wrong. Or if it is listed in the ingredients than maybe it means Lea & Perrins Worcestershire Sauce.
ann_t, the recipe was given to her over the phone by a 3rd person. It was spelled out as "Perrin of beef" to her, and was one of the ingredients called for in coating the meat... I think I heard her say 2-3 tbs, but I may be mistaken. Sorry, but I don't know the list of other ingredients.
We immediately thought of Lea & Perrins, but have never heard it referred to as 'Perrin of beef', nor are we aware of any other Perrins product w/ beef in the name.
islay_corbel, I was actually hoping it might be a product you recognized that's not available in the US. lol! My sister only asked if I knew what it was.... she didn't convey the rest of the recipe.
I guess we'll never know what that ingredient it is. The recipe came from my sister's SIL's sister, who apparently "made the best prime rib ever". :o)
The only mention of "perrin of beef" on the entire worldwide web, as determined by Google, is on Gardenweb, through your question.
Lots of people are named "Perrin" but the best food related match is a beer.
There is also a Lea & Perrins steak sauce. Is the SIL's sister a native English speaker? If not, I'm guessing that that might be a good contender for what she was talking about, using "of" instead of "for". (Prepositions don't translate directly.)
I was wondering if perhaps some sort of pate-like "terrine" was intended. But that would seem an odd ingredient, just 3T worth, without further discussion.
