Michelle, as we have been discussing this bread, the problems & such. I've finally I made the Chocolate Cherry-Pecan KN Bread w/great results.
I did make adjustments in the baking temps & procedures, as follows. Oven was in convection mode, pre-heated @375d. w/the two stones in the oven for 40 minutes. Placed the bread in the vessel, & placed pot on the stone w/the other stone placed 2 rack spaces above the first stone. (I didn't pre-heat the pot, as it's not a heavy pot to begin with).
I baked it covered for the first 20 min. as per directions. Then I proceeded to removed the cover & continued baking @ 375 for 10 minutes, after those 10 mins pasted, I reduced the temp to 350 & baked for the additional 30 minutes.
I took a chance, I'm daring that way, & it worked!
No burning whatsoever, & coloration was stunning.
For those who maybe interested in the recipe, it can be found at King Arthur's site. I used 2 baking stones, otherwise proceed w/directions as per recipe but possibly w/lowering the temp a little.
