The famous Stuffed French Toast

I have searched the forum and can not find the best stuffed french toast recipe, I think it is Woodie's!

I know it has been posted more than a few times, but could someone help me out - having brunch on Boxing day and I need to make my grocery list!

I've got it up and ready to go so here it is (last year I made it with croissants):

Creme Brulee French Toast

1 stick (1/2 cup) butter
1 C. packed brown sugar
2 T. maple syrup
1/2 t. rum extract
1 country-style bread (an 8- to 9-inch round)
6 eggs
1 3/4 C. half-and-half
1 t. vanilla extract
2 teaspoons Grand Marnier
1/4 t. salt

Butter a 9 x 13-inch baking dish.
In a small saucepan over low heat, melt the butter with the sugar, maple syrup, and rum extract. Pour the mixture into the dish.

Cut six 1 1/2-inch thick slices from the center of the bread. Arrange the bread slices in one layer in the baking dish, squeezing them slightly so they fit.

In a bowl, whisk the eggs, half-and-half, vanilla, Grand Marnier, and salt. Pour the mixture evenly over the bread. Cover with plastic wrap and chill at least 8 hours and for up to one day.

Let the dish sit at room temperature for 30 minutes. Set the oven at 350Â° F.

Uncover the dish and bake the French toast for 35 to 40 minutes or until puffed and golden. Serve at once.

OMG this looks devine!!! Thank you so much for the quick response Mustang.

I do not typically make this kind of dish - what would country bread be - fairly dense, not airy? Or maybe I could go the croissant route too.

As a 9 year old kid in Elk City, OK in 1950, I met Tim Holt, Fuzzy Knight & Randolph Scott who were some of my favorite cowboy movie stars that made personal appearances at a local movie theatre. And, during our town's 50th. anniversary in 1951 I met & shook hands with Jess Willard who had been the Heavyweight Boxing Champion of the World, 1915-1919. He lived in my hometown during the early days & helped lay the bricks that paved Broadway St. and are still there and "in use" now in 2006! Moving ahead several years and after I had moved to PA...my wife & I saw Richard M. Nixon as he arrived by helicopter and dined at the then-famous Bookbinder's Restaurant in Philadelphia one evening while we were eating dinner there also. Then later, during the mid-1970's, we saw "The Duke" John Wayne in New York City getting out of his limousine and greeting the gathering crowd at Rockefeller Center. Guess that's about it... LarryD

I did it..... I found the recipe at King Arthur and made the small loaf (will probably regret not making the large loaf ;-). Snitched the heel when the loaf was cool and shared it with hubby and he said he'd like a grilled cheese for lunch tomorrow using the bread. I used hard red spring wheat flour since I had enough leftover from some baking I did Friday, and my home-milled cornmeal was fairly coarse (probably a medium grind), which adds more texture and "tooth", which we liked. I bet the bread will smell heavenly as a grilled sandwich. I also used dehydrated onions (1 T. instead of 1/4 c. fresh diced onion). Once I make it into a dry stuffing/dressing mix, I plan on making this recipe... SALMON LOAF 1 (16-oz.) can salmon, INCLUDING liquid 1/2 c. turkey stuffing mix 1/4 c. chopped onion 1 egg 1/2 c. mayonnaise Mix well. Pack into loaf pan. Bake in a 400-degree F oven for 30-minutes. [Grainlady note: I will bake it in a muffin pan for individual servings I can freeze. This will be wonderful with creamed peas made with freeze-dried peas.] Thanks again for the recipe Tricia!!! Upside-Down Banana-Coffee Tart TIME/SERVINGS Total: 1 hr 5 mins Active: 25 mins Makes: 12 servings By Regan Burns We got the inspiration for this recipe from the French apple upside-down tart known as tarte Tatin. For our version, weve replaced the apples with bananas and infused the caramel with coffee. What to buy: Look for firm-ripe bananas that are still tinged with a bit of greenÂif they are too ripe, theyÂll turn to mush in the oven. Special equipment: A 12-inch cast iron skillet is perfect for this recipe; however, if you donÂt have one, any heavy-bottomed ovenproof frying pan will work. Be sure to have a platter or plate slightly larger than your skillet for turning out the tart once itÂs cooled. One with a slight lip or rim is preferable, as the caramel tends to spread a little once the tart is unmolded. INGREDIENTS For the dough: 1 1/2 cups all-purpose flour 1 tablespoon granulated sugar 1/2 teaspoon kosher salt 8 tablespoons (1 stick) cold unsalted butter, cut into small pieces 5 to 7 tablespoons cold water For the bananas: 8 tablespoons (1 stick) unsalted butter 1/2 cup light brown sugar 1/4 cup strong brewed coffee 1 (4-inch) cinnamon stick 3 (3-inch) strips lemon zest 2 teaspoons vanilla extract 6 firm-ripe bananas 2 tablespoons fresh lemon juice Coffee or cinnamon ice cream for serving INSTRUCTIONS In a large bowl combine the flour, sugar, and salt. Add the butter and toss to combine. Using a pastry blender, cut the butter into the flour until the mixture resembles coarse meal and only pea-sized bits of butter remain. Add 4 tablespoons ice water and stir until incorporated. Add small amounts of the remaining water until the mixture holds together enough to form a dough (it may be easiest to use your hands). Gather dough into a ball, flatten it into a disk, and wrap with plastic. Refrigerate for 1 hour. Heat oven to 425Â°F. Position the rack in the center of the oven. In a 12-inch cast iron skillet (or other large, heavy, oven-safe skillet) melt the butter over medium-high heat. Add the brown sugar, coffee, cinnamon stick, and lemon zest, stirring continuously until the mixture boils. Reduce heat to medium low and simmer, stirring frequently, until sugar is completely melted and mixture is thick and syrupy, about 5 minutes. Use a spoon to fish out the cinnamon stick and lemon zest and discard. Stir in the vanilla extract and remove pan from heat. Peel the bananas and cut them on the bias into slices 1/2 inch to 3/4 inch thick. Add the lemon juice and banana slices to the syrup mixture, and gently stir to coat each piece with caramel. If desired, use the spoon to arrange the banana slices in a decorative pattern. On a lightly floured surface, use a rolling pin to roll the dough into a round that is just larger than the cast iron pan. Lay it over the banana filling, tucking the overhanging dough around the sides. Prick the dough with a fork in several places. Bake tart in the oven for 25 minutes, or until the crust is puffed and golden, and the filling is bubbling around the edges. Remove from oven and let sit on a wire cooling rack for 15 minutes. Run a paring knife around the edge of the tart and place a rimmed platter that is slightly larger than the cast iron skillet upside down over the pan. Flip the pan and plate over to invert the tart onto it. Slice the warm tart into wedges and serve with ice cream.

Here's a simple recipe for a savory (as opposed to sweet) cornbread which I find works very well as a base for dressing. It's from Bernard Clayton's New Complete Book of Breads. I usually leave out the salt if I'm using it for dressing, though. Yellow cornmeal makes a dressing that is slightly more visually appealing than white, IMHO, but either tastes fine. Freshness of the corn meal is more important than color, so buy your corn meal at a store that seems to have a good turnover of it; that's probably not at a gourmet store, but rather at a store serving a less snooty clientele. You can add whatever you like to your dressing, and as a general guide I find one batch of the cornbread below works well with about a pound of bulk sausage (hot, mild or whatever), one large onion, some celery and mushrooms, then moistened with chicken stock. You can, of course, expand this as needed; a quadruple recipe just fits in a 5 qt mixer bowl. 2 eggs, room temperature (if the eggs are straight from the fridge, put them in a bowl of hot tap water for a few minutes) 2 cups buttermilk, room temperature (you can nuke it a little to take the chill off if need be) 1 tsp baking soda 2 cups yellow cornmeal (but white is okay, too) 1 1/2 teaspoons salt Preheat oven and greased baking utensil (skillet or 9 x 9 pan) to 450° while mixing batter. In a small bowl beat the eggs and mix in the buttermilk. In a mixer bowl, mix the baking soda, cornmeal and salt. Pour in the egg-buttermilk mixture and mix well until smooth. Pour batter into the preheated pan, and return the pan to the oven for 20 to 25 minutes. It's done when a knife inserted into the center of the pan comes out clean & dry. Note: if you’re making this as a basis for cornbread dressing, leave out the salt. The sausage and other ingredients you add will have plenty of salt for the dressing.

I haven't seen the version of this with rum extract and maple syrup. I will have to save it and try it. I make this as part of Christmas breakfast every year.

CRÃME BRULEE FRENCH TOAST
(Courtesy of Arthur Schwartz, WOR Radio) from Woodie

1 Stick Butter
1 Cup Brown Sugar
2 Tablespoons Corn Syrup

8-10 inch round country loaf, or
1 pound French bread or
1 Challah
5 eggs
1 1/2 cups half and half
1 teaspoon Vanilla
1 teaspoon Grand Marnier
1/4 teaspoon salt

1. Melt butter, sugar and corn syrup in saucepan over moderate heat. Pour into 9 X 13 pan.
2. Slice bread into 6 slices (1 inch thick) and place on top of the sauce in the 9 X 13 pan, press together to fit.
3. Whisk together eggs, half and half, Vanilla, Grand Marnier and salt. Pour over bread.
4. Cover and chill 8 to 24 hours.
5. Bake at 350 degrees for approximately 40 minutes, until puffy and brown.

I make a different one that is not so sweet. I take two pieces of thin bread and spread a mixture of cream cheese, powdered sugar, and chopped walnuts and sandwich them together. Then I dip them in the egg and cinnamon mixture and cook as usual. The syrup is a small jar of apricot jam mixed with equal parts of orange juice, cooked together. This is absolutely wonderful. (Very rich)

I think I tweaked this recipe once also by putting in cardamom and a bit of concentrated black tea and callling it 'chai french toast'. Forgot about that one!

You guys are killin' me here with these ideas!! With DH a diabetic and Chance not a breakfast food person I rarely make anything sweet and fancy for breakfast or brunch. These sound so good.

In case anyone wanted another recipe, here is the one for Paula Deen's Praline French toast. Very similar to Woodie's, but has nuts added.

As long as you are still considering FT, here is one I've made for a long time:

German Stuffed Toast:
Â 1 1/2 loaves cinnamon raisin bread
Â 16 ounces cream cheese (2 pkgs)
Â 1 tsp vanilla
Â 1 cup raisins or pecans
Â 1 can apple pie filling or make your own apples
Â 2 cups half- &-half
Â 8 eggs (large)
Â 1 cup maple syrup (1/2 cup + Â½ cup)
Â 1/2 cup butter
Grease 9X13 baking dish or larger. Pre-heat oven to 350 degrees.

Cube bread (approximately 1 inch x 1 inch)
Mix cream cheese with vanilla and pecans
Layer: bread, cream cheese, apples, bread

Mix in mixing bowl: milk, eggs, 1/2-cup maple syrup
Pour over casserole, making sure that bread is saturated
Cover and refrigerate overnight
The next morning: Sprinkle casserole with cinnamon. Bake for 1 hour.

Before serving, mix melted butter and 1/2 cup maple syrup in small saucepan. Pour mixture over baked casserole, punching holes in casserole to allow sauce to penetrate.

Serves: 10.
