Spanokopita

I made a spanokopita tonight. This is basically several sheets of buttered phyllo on a baking half sheet, then a filling layer of chopped and wilted spinach, feta cheese, garlic, yoghurt, nuts, lemon zest and juice, and whatever spices you like, topped with some more phyllo. Pre cut into squares, then bake 400F for about 30 min or until the upper phyllo is nicely brown.

Here is the problem. The bottom layer of phyllo, which was resting on the baking sheet, is neither browned nor flakey.

I thought of some solutions. One was to preheat a pizza stone on the oven rack, then place the baking sheet pan on the hot stone. The other was to buy a cooling rack that fits in the sheet pan, and lay out the phyllo on that. The third was to turn the baking sheet upside down, and lay the phyllo on the ''bottom'', idea being there wouldn't be sides to trap moisture.

Any guesses which will work better? Or another solution?

Also, any suggestions to spice up this dish a bit? It was a bit bland. Maybe I needed more cayenne or some red pepper flakes.
