Thickener for a clear gravy?

John Liu

Just a quick question, please.

What are some thickeners that I can use in a clear liquid (a consomm, for example) to thicken it to sauce or gravy-like consistency, without eliminating the clarity of the liquid?

Hopefully something that I have or can get ahold of tomorrow (T'giving). I have xantham gum, cornstarch, and might have some arrowroot around here. I don't have tapioca powder.

I would like to reduce my gallon of turkey stock down to two or three cups, then clarify it in the refrigerator, then thicken it. I want a "gravy" that is not light and opaque, but that instead dark and clear or at least translucent.

I may try adding a bit of liqueur to it, but will do that with a test sample first.
