Doing A Semi-Traditional T'giving Dinner, After All

We are doing a semi traditional T'giving after all. Turkey and lamb.

I think most of our guests will prefer dark meat to white. So we are cooking the smallest turkey we can find, plus six legs. I'm going to debone everything, brine the meat, stuff the legs and breasts with something interesting - not sure what, maybe cranberry and cooked sausage - then roast them.

For gravy, I plan to roast the carcass, leg bones, wings and trimmings, and make a stock with chicken stock and aromatics (so, a double stock), then reduce it down to a couple cups. Combine with the roast drippings and flour for gravy.

This will all be an experiment for me, as I've never stuffed turkey parts, but it will be fun.

The lamb will be grilled with lots of rosemary. My friend is handling that.

For sides, I'm thinking your basic garlic mashed potatoes, roasted Brussels sprouts, beer and sugar carrots. If someone wants a pie, they'd better bring it, I'm on a diet dammit. Or is that a dammit diet.

What would be a good appetizer? SWMBO has nixed soup.
