Can this be frozen? ...and two more questions

One of my friend asked me this question, and I have no clue, but I told her I'd post and ask this at my favorite cooking site!

She plans to make a Weight Watchers dessert to bring to an employee pot luck, but wants to make it ahead of time and freeze it.

The recipe is simple:
one box of Angel Food cake mix
one big can (20 oz) of crushed pineapple in its own juice (the juice will be used, too)

Mix everything together, the pour into a 9 x 12 pan and bake according to directions on Angel Food cake mix box.

Question #1:
Once it cools, will she be able to freeze it for a few weeks until the pot luck event, or will it 'suffer in any way?

The Weight Watchers recipe apparently uses the box mix that is all-in-one (no separate packet of dry egg whites to whip).

The boxed mix she purchased is not an all-in-one mix...it has two packets in it--one packet is dry egg whites, which she is supposed to reconstitute and make into stiff peaks by adding water (I guess maybe she can use the pineapple juice). These egg whites then get folded into the other "cake" package in the box mix.

Question #2:
Does anyone happen to know if the "dump and mix" method will work, or if she will have to whip the egg whites and then fold them into the mix and *then* mix in the pineapple/pineapple juice?

Question #3:
Does she have to cool the cake upside down in the 9 x 12 baking pan?

I don't know for sure, but I probably wouldn't try freezing a combination of fruit and cake mixed up like that, because when it thaws, I suspect that the juice would seep out of the pineapple and turn the cake into mush. Kind of like when you buy a frozen fruit pie, or make a pie with frozen fruit, you mustn't thaw it first, for the same reason, you end up with mush for the bottom crust. I could be wrong though, perhaps someone who bakes more sweets than I might know better.

I'm not a baker, but I agree with Rachelellen about the mushy result from the fruit.

I don't think the dump approach will work, either. The packets are separate for a reason. I think she'll end up with something much denser if she doesn't follow the package directions.

Cake freezes very well, so if I were her I'd make the cake per directions on the box. Wrap it well. Freeze it. Whip up a pineapple glaze the night before and bring it in a bowl for people to spoon over their servings. I'm not a fan of pineapple but love Angel Food, so I like the idea of serving it on the side.

Rust isn't my main reason for removing rings although it sure helps prevent it and the damage to the jar threads than can result. My main concern is the molds, yeasts, and bacteria that can grow there in that nice dark, snug, place from the boil-over during processing and any residual dampness. I won't go into the exploding jars that can't pop their lids because they have a ring left on. ;) Per the BBB - "Before placing the jars in your pantry, remove the bands and wipe off the lids and jars to remove any food residue. Rinse and dry. Do not replace the bands. " Since it is recommended that the jars and threads are all wiped down before putting in storage anyway, the rings have to be removed to do that. So why wipe down the jar and threads and then put a dirty ring back on? And, it also gives you yet another opportunity to check your seals and discover any weak ones. Once the jar is opened for use it is easy to simply add a ring back on the jar or use one of the plastic ones for fridge storage. 1. No. More free water and more alkaline pH. You can sub zucchini for cucumbers in most of the NCHFP/Ball tested and approved cucumber pickling recipes for canning as long as the amounts are not changed because they all contain sufficient acids and safe processing and storage instructions. But other recipes and other methods of food preservation may not be safe for substitution and have to be evaluated individually. 2. I have never seen a ponytail palm flower at that size. You are very lucky with it! Plumeria is looking great and that musa basjoo will probably have ripe fruit by the end of the summer (you cant eat the fruit but maybe you can germinate the seeds if viable). Looks like you are having lots of luck this year with your blooms. Greg. Its been very dry here too and pretty cloudy. 2 days ago was nice though. It really poured. Wow I've missed some activity on this thread! Thank you all so much for all your incredibly valuable help. In the end, I realized that I was definitely over thinking the whole system (better to over think it than under think it, though, right?) and we will be installing standard horizontal strapping with gaps between the straps. The air gap created will be better than most houses built in our area and since we are in a moderate rainfall area I do believe it will be adequate.
