I usually buy a small jar of prepared horseradish just for Jezzy, as I like to call it, LOL.
A few weeks later I get to throw it out.
So....I figured since some of us might be in the same boat, why not start a thread with recipes to minimize wasteage (is that a word?).
Until I post KatieC's entire swap package, I'll provide a hint: she sent me a cookbook created by her library community. I thumbed through it during a cooking break today and found this meatloaf recipe that uses a whopping 1/4 cup, enough to lessen my guilt.
Please help me find more. Any other orphaned Thanksgiving ingredients with which we could help each other?
Horseradish Meat Loaf

1 1/2 lbs. hamburger
1/2 lb. sausage
1 cup grated onion (Katie: can you check that, it actually says '1/' so it must be a fraction)
1/4 cup horseradish
1 tsp. dry mustard
2 eggs slightly beaten
1 cup bread crumbs
1 tsp. salt
1/8 tsp pepper
1/2 cup tomato catsup
1/2 cup milk
Mix all ingredients well, Pack into well-greased loaf pan. bake in a moderate oven for one hour. Serves 8.
