I goofed! Sweet potato casserole!

I'm going to do Thanksgiving tomorrow with my best friend's family since I work on Thursday. Everyone is supposed to bring one item and when they were going over the menu, I noticed a huge hole in it. Nobody was bringing sweet potatoes!

I volunteered to do the sweet potato casserole because I thought it would be easy to do in advance since I have to work tonight.... so last night, at 3 AM, I began cooking.

Everything seemd to be going OK until I finished mixing and went to taste. Not nearly enough cinnamon. So I kept adding, stirring and tasting for about 10 minutes. I thought my cinnamon was just really old, but after dumping nearly half the jar in, I could finally taste a hint of the stuff in the potatoes. I stopped there and decided just to go ahead and top and bake the casserole.

Then I realized that I'd been using my cinnamon SUGAR instead of just straight cinnamon so the cinnamon was very diluted! Doh!

Anyway, this is the result... It smelled good, but I didn't taste it yet. I have a pumpkin pie (store bought I must confess) to bolster my contribution as well. :o)

Of course there would have been more, but I wasted so much tasting! The baby one is for my vegan friend who will not eat marshmallows.... I told him to just scrape them off his portion, but he balked so I put the mini loaf pan to good use! He's worth the little extra trouble :o)

Lesson: when things are in identical containers, pay attention.... or use real cinnamon sticks and a microplane next time! ;-/

Cooking at 3 AM? I think using cinnamon sugar is understandable! I probably would have added something like cumin!

This one travels well. IRISH POTATO CASSEROLE 8 to 10 medium potatoes, peeled and quartered 1 (8 oz.) pkg. cream cheese, softened 1 (8 oz.) pkg. sour cream 1/2 cup butter, melted 1/4 cup chopped chives 1 clove garlic, minced 2 tsp. salt Paprika Cook potatoes in boiling water about 30 minutes or until tender. Drain potatoes, and mash. Beat cream cheese with an electric mixer until smooth. Add potatoes and remaining ingredients except paprika; beat until just combined. Spoon mixture into a lightly butter 2-quart casserole; sprinkle with paprika. Cover and refrigerate overnight. Remove from refrigerator 15 minutes before baking. Uncover and bake at 350Â° F. for 30 minutes or until thoroughly heated. Yield: 8 to 10 servings. My best friend made this for her Thanksgiving luncheon at work this past week and said it was heavenly: THREE CHEESE GARLIC SCALLOPED POTATOES 1-1/2 lbs. Yukon Gold potatoes, thinly sliced 2 Tblsp. butter, divided 1 pint heavy cream 2 cloves garlic, thinly sliced salt and pepper to taste 2 cups shredded Cheddar cheese 4 slices Provolone cheese 1/2 cup grated Parmesan or Romano cheese 1. Preheat the oven to 325Â° F. Grease a 1-1/2 quart or larger casserole dish with butter or nonstick spray. 2. Layer half of the potato slices in the bottom of the casserole dish. Dot with half of the butter cut or pinched into small pieces. Arrange half of the garlic slices over the potatoes, and then pour half of the heavy cream over. Sprinkle one cup of Cheddar cheese over the layer, and season with salt and pepper. Repeat layering of potatoes, garlic, cream and Cheddar cheese, and then top with the slices of provolone cheese. Season again with salt and pepper. 3. Bake for 1/2 hour in the preheated oven, then sprinkle the Parmesan or Romano cheese over the top. This will create a semi-hard cheese crust. Here is a recipe with more thorough instructions. It uses less milk and fresh potatoes so you can compare how you made it and see if you did something "wrong"? Liz, I've always sliced the sweets at about 1/4", but I don't think it matters much....thicker slices may take a little longer. I've used partially cooked sweets when time is an issue, too. The measurements are all arbitrary, whatever fits in the dish will work. I wrote down exactly what I used one year when The Kid was off to college and kept asking me for 'real recipes'. Don't think I've used exactly the same proportions since, lol.

My camera memory card died so I can't take pictures right now. But the sweet potato dish was a hit. Here's how I ended up making it. Didn't use an egg, and the vanilla yogurt was moldy so didn't use that., it would have been unnecessary anyway. I scrubbed four sweet potatoes, and put them in a 9 inch metal pan with a little bit of water in the bottom, and baked them at 400 degrees for just under an hour. Then I peeled them and diced them up and mixed them with about a half cup of crushed pineapple, 2 TBLSP of melted butter and 2 TBLSP of brown sugar and a heaping half tsp. of cinnamon and a tiny pinch of salt. Mixed and mashed this all together and put it into a greased 8 inch pyrex baking dish. Topped with mini marshmallows mixed with chopped walnuts, two big hand fulls. Took this to dad's house covered in foil. Baked at 375 covered for about 35 min. and then uncovered for about 10 more. I have to say I kinda liked it and the marshmallows went well with the toasted nuts. They didn't add much other than color and texture to the top, but that was not necessarily a bad thing. It was totally a dessert though, but since I just had ham and rice pilaf and salad to round out the meal, it was fine, not too sweet under those circumstances.

Thanks... everybody loved it! As a matter of fact, there were no leftovers! My friend's dad asked if it was supposed to be a dessert or a side dish, so I guess it was a bit sweet, but he had 3 servings!

A delightful day, completed by getting a tongue bath by their lovely dog! Who says pitt bulls are mean? I even got to vacuum... and my best friend broke the chair he was sitting in, so we all go a laugh (because he wasn't hurt... not because he's fat, but because it was a rickety old antique chair). :o)

I could keep a 'did-somethin'-dumb' post alive for years.
Used corn starch instead of baking powder a few weeks ago.
Totally lost a 1 cup stainless measure for weeks. Mr Sleeve found it in the compost pile.

Looks great and glad it was welcome and enjoyed. Nice touch to make a side one for a loved
friend.

Always nice when an accident turns out. You should write down what you did for next year, when they ask you to "Bring the sweet potatoes you made last year."

There's something about sweets and marshmallows. No one in my family would admit to liking marshmallows on top, but somebody always sniveled when I made them savory, so I did both.

My best did somethin dumb post would be when I found one of fruitcakes in the back of the cookstove oven. Black and very lightweight. I kept it for a couple of years..my very own fruitcake joke.

I think the reason we do these things sometimes is just so that we have good stories to tell yeas later!

Katie... it warms my heart to know that there are still people who care about quality products in an age where most people would run out to their nearest big box store and buy the cheapest piece of plastic junk from China they could find... You made a wonderful choice. People are often proud to tell me what vacuum they bought and typically I have to pretend it's good because the truth might make them feel bad... not so in this case. Riccar is owned by a company called Tacony and they also make Simplicity vacuums right in the USA, one of the last few companies to still do that. Solid performers, quality bagged machines, very powerful, reliable... excellent choice! They actually have a vacuum cleaner Museum at the factory in St. James, Missouri and I know the guy who runs it because he's a collector as well. Which model did you get?

Bobby, it's an 8955. I bought one for my library 12 years ago and we beat the heck out of it (an 87-something...it's maroon). Then I got one for my branch a few years later. DH is on floor duty and he's really impressed. It handles the newfiemutt and cat hair. He can't believe he hasn't had to take a utility knife to remove the hair from the roller.

I'm getting picky about where my products come from. Learned long ago that quality trumps cheap. The best part is, the shop I deal with is run by a really cool old guy...small, local, and he appreciates that I appreciate the quality. And he gives me 25% off on anything I buy for the library, hehe.

Katie, it seems like we did, but it's for a good reason.... people can still chime in with silly things they did in the kitchen if they want!

I have the Simplicity equivalent of your Riccar.... I declare it would suck the paint off a wall! Plus a metal handle, metal brushroll, metal sole plate, fingertip switch.... twin fan motor that is about the size of a dinner plate (ok not quite but huge for a vacuum)... truly awesome! They had some issues with some of their newer style models getting a cracked handle but not with the older style machines....

Congrats and thanks for buying a vaccum that didn't require me to have to craft a diplomatic response! I'm too tired to make one up. :o)

These are my three favorites right now.... the red one is a Miele.... isn't she just glorious? Anyway, the green guy is the Simplicity equivalent to your Riccar....
