crock pot stuffing recipe?

A while back I saw where someone had mentioned making stuffing (dressing) in a crock pot (slow cooker). We are doing Thanksgiving at my house this year & as much as I like the stuffing in the turkey, I'm a little leery of doing it myself & don't want the extended cooking time. I have a great recipe for the stuffing. If possible, could somebody post the method (& times) for a moist crock pot stuffing?

I made this last Christmas for the first time. We all loved it, so I made it this year for our Canadian Thanksgiving. Again, it was a great success. It's the only way I'll make stuffing/dressing from now on. (I always add cooked rice to my dressing, so I put it in this one as well).

Slow-Cooker Stuffing/Dressing

1 cup butter or margarine
2 cups chopped onion
2 cups chopped celery
1/4 cup chopped fresh parsley
12 cups dry bread cubes
1 teaspoon poultry seasoning
1 1/2 teaspoons dried sage
1 teaspoon dried thyme
1/2 teaspoon dried marjoram
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
4 1/2 cups chicken broth, or as needed
2 eggs, beaten

Melt butter or margarine in a skillet over medium heat. Cook onion, celery, and parsley in butter, stirring frequently.
Spoon cooked vegetables over bread cubes in a very large mixing bowl. Season with poultry seasoning, sage, thyme, marjoram, and salt and pepper. Pour in enough broth to moisten, and mix in eggs.

Spray slow-cooker with non-stick spray and transfer mixture to slow cooker.
Cook on High for 45 minutes, then reduce heat to Low, and cook for 4 to 6 hours.

I chose to start the crock pot early because I didn't have time to make dinner at dinner time yesterday. I also wanted to cook the veggies (especially potatoes) until very soft - that's how my two boys like it - also the longer the cooking time the better the flavor. I usually use potatoes (carrot/yam/rutabaga), onion, celery, or any root/stalk type of vegetables in it, depends on what I have on hand. Tomatoes do add good flavor to the curry but you can go without. If you want to incorporate more veggies cooking in slow cooker I have another idea. I use my crock pot to make lentil soup. I use red lentil because of the brilliant color. I sautee the veggies i.e. onion, parsnip/yam/rutabaga with celery and other veggies I like. Put in crock pot with water/broth/milk/juice (whatever your choice is). My family like a bit of ham in the pot so I put a small chunk of ham with a bay leaf or two, season with salt & pepper. Cook on high for 4 hours, or low for 8, until everything is very tender. Then I fish out the bay leafs and ham, puree everything else in a blender. The soup is very creamy and no veggies in sight. Slice the ham and chop up some fresh parsley and place them over a bowl of soup. Drizzle some yogurt or any dressing desired. My husband and little love this dish. Cook all day on low (or #3 in a slow cooker). When meat is done, shred it and put back in its juices. Serve on warm kaiser buns (toast if desired). Top with favorite cheese--cheddar, colby/jack, mozzarella/cheddar, etc. Warm in the microwave if cheese needs to be melted. Can also top with sauteed onions, green peppers, and mushrooms if desired. Beef roast- 3-4 lb beef arm roast- for tenderness 3 cups water 1 medium chopped into slices yellow-and or- red onion 1 packet dry onion soup mix 1 small bag of baby carrots 5 white round potatoes chopped into cubes whit skins on-explain later 1 can of drained mushrooms(or 2 depending on how much you like them) 2 tbsp salt pepper seasoned to taste 2 tablespoon garlic powder- or you can replace salt with garlic salt 2-3 tablespoons of extra virgin olive oil basil,oregano,and any other of your favorite seasonings In crockpot mix together 2 cups water, half packet of onion soup mix, salt and pepper and any other seasonings. Put crockpot on high and let soup warm while we move to the next step Have a large skillet- big enough for the roast- place on stove with olive oil and turn stovetop to medium- let this heat up while your seasoning the beef First cut the beef roast in halves. Blot dry with a paper towel.. next take a knife and make slits in the beef against the grain all the way across just enough to score it for seasonings. season the beef the with the seasonings from above.. Braize the beef for about 5-8 minutes on each and everyside of the beef- until it has a nice brown coat. Once browned use a knife to poke slits through the beef to help the flavors cook through. Next step place the browned beef in the crockpot and put crock pot to either A) medium (will take apprx. 6-8 hours) B) leave it on high (apprx. 4-5 hours) Next in the skillet you had braized the beef in, add your potatoes, carrots, 1 cup water, the rest of the onion soup mix, the chopped onions, mushrooms as well as any seasonigs you desire leave skillet on medium and let simmer while coverd for apprx. 10 -15. This is why you leave the skins on the potatoes, it allows the potatoes to get soft yet the skin keeps them intact as they dont crumble..... yet. Once that has simmered simply pour into your crockpot. cooked for the alotted time. The roast and potatoes will be melt in your mouth, and with the onion/beef gravy on top will be flavorfull.

No, not at all Wannaflower. I was a little trepidatious when I saw that eggs are there, and I searched and eggs are used often in dressings. There are only 2 things that my husband won't touch.....eggs and mushrooms. He raves about this recipe. :)

Oh mushrooms were in the original recipe, but I left that ingredient out, as I've never put them in.....plus, hubby.
So it's very versatile as to what you can put in. Rice is a staple in my dressing :)

Thanks for the info Jasdip! I've never heard of rice in stuffing, but I can see how that would work. I'm torn about the mushrooms, we all like them but haven't had them in stuffing (till last weekend at a friend's... WONDERFUL! those who don't like 'shrooms picked them out). I'm glad to have a method to follow.

I came to read this thread because I want to save space in the oven and also thought the dressing would be good to put in the crock pot. But I'm very surprised to read about it cooking for so long. Doesn't it just need to get thoroughly heated? I usually saute the onions and celery first. Wouldn't an hour be plenty of time?

I'm not sure about 1 hour, but I've cooked it for 4 hours with excellent results.
