Pecan Pie Muffins

As requested by Patti, here is the recipe for the Pecan Pie Muffins.

I got this recipe from an online friend named KIM but I'm not sure where she got the recipe from. Thanks to whoever thought this one up! It's the best!!

Pecan Pie Muffins

1 cup light brown sugar, firmly packed

1/2 cup flour

1 cup chopped pecans

2 eggs, beaten

2/3 cup melted butter

1 tsp. vanilla extract

Mix dry ingredients; add wet ingredients. Prepare a mini-muffin pan with cooking spray. Spoon batter into muffin pan. Bake at 350 degrees for 20 minutes. Start testing after about 10 to 15 minutes; if firm to touch and slightly brown, remove from oven.

Jwm211, here is the recipe. I use fresh grated Reggiano Parmesan and haven't had a problem with it sticking. Home Cookin Chapter: Recipes From Thibeault's Table Parmesan-Coated Sweet Potato Fries ================================== http://www.wholeliving.com Serves 4; Prep time: 15 minutes; Total time 40 minutes 1/2 cup all-purpose flour 3/4 teaspoon coarse salt 1/2 teaspoon ground pepper 2 large egg whites 1 1/3 cups grated Parmesan cheese 4 small sweet potatoes (about 2 pounds), scrubbed and quartered lengthwise (I peel the potatoes) Preheat the oven to 425Â°. Line a large rimmed baking sheet with parchment paper or aluminum foil and then set aside. In a shallow bowl, stir together the flour, salt, and pepper. In a separate shallow bowl, lightly beat the egg whites with 2 tablespoons of water until combined. Place the Parmesan on a sheet of waxed paper or put it in another shallow bowl. Dip the sweet potato first in the flour mixture, shaking off excess. Then dip each wedge into the egg white mixture until coated. Finally, dip the sweet potato in the Parmesan, pressing the exposed surface of the potato into the cheese. (Don't worry if some gets on the skin.) Transfer potato wedges onto the prepared baking sheet as you go. Bake potatoes until tender and crisp, about 25 minutes. Serve sprinkled with more salt if desired.

Live on the coast in the Carolinas. Went to my book club meeting yesterday. Menu included pimento sandwiches, pecan tassies, cheese straws, and the drink was a kool aid punch, your favorite flavor of sweetened kool aid, large can of pineapple juice, ginger ale, she had frozen a block of the punch and had it floating in the punch bowl to keep it cool. Had other things, tea cakes, cucumber sandwiches, and also another drink with cheerwine and ginger ale. Reason we have so much food, we can take a sampling of our favorite foods, not sure if we are a book club or a food club. We sure have fun at meetings.

I had some buttermilk that I wanted to use up, and made these buns. They are similar to Caroline's easy spoon rolls, in that the dough rises and stores in the frig. So now we have 2 recipes that are easy to keep on hand and use. I tore of a section and cut rounds with a cookie cutter, flattened them and folded them in half. They puffed up like crazy! They can be put in muffin tins, cut in triangles and rolled like crescent rolls....whatever you want to do with them. I love the idea that when they are formed, they are immediately baked....no rising required. The recipe came from Bumblebeez at the Cooking Forum. The dough is very soft, so add flour as needed to the board and dough to make it easy to handle when lightly kneading. Buttermilk Refrigerator Rolls 1 Package dry yeast 1/2 cup warm water 1/2 cup melted butter 4 1/2 cups all purpose flour 1/4 cup sugar 1 tablespoon plus 1 teaspoon baking powder 1 teaspoon salt 1/2 teaspoon soda 2 cups buttermilk Dissolve yeast in warm water in a large mixing bowl. Let sit 5 minutes. Stir in butter. Combine dry ingredients; add to yeast mixture along with buttermilk. Stir well. Turn dough out on a floured surface, knead gently a few times and shape into a ball. Place in greased bowl, cover, and refrigerate until needed. Keeps for one week. Break off a soft ball sized lump of dough and roll into a circle about 1/4" thick. Cut into pie shaped wedges and roll up from the wider edge into crescent shapes. You do not have to let them rise again. Bake on greased baking sheet at 400 for 8-10 minutes.

I'll probably get rocks thrown at me for admitting to using a box mix....BUT...I have struggled with a banana bread recipe that I am really happy with for quite some time. My neighbor makes really good banana bread...I love it. Very basic recipe but I can not seem to duplicate it. Mine just doesn't come out the same. She used to bring me some when she'd bake but we're not friends anymore SO NO MORE OF HER GOOD BANANA BREAD FOR ME!! lol Anyways...I had 2 overripe bananas at home so I decided to try the Chiquita brand box mix for banana bread...2 bananas water and an egg.....well what do you know....some pretty good banana bread for out of box!! There's one piece left :-)

Those look good and easy so I've passed the recipe on to my daughters and sister as they always need something extra to go with their coffee and added it to my files.

Yes they do rise a little. But they have somewhat of a dense consistency.

Made these yesterday, and as your husband said, they're dangerous! Brought most of them to work this morning to keep from eating them all myself. They went over well. I think they were even better the next day. Thanks for an easy and tasty receipe.

Perhaps you would enjoy the Pecan Pie Squares my family likes.

Maple Pecan Pie Squares

3 c. sifted flour
Â¾ c. butter or margarine, softened
1/3 c. sugar
Â½ tsp. Salt
Maple Pecan Filling Below

Heat oven to 350. Grease a jelly roll pan, 15 1/2 x10 1/2x1 inch. Mix ingredients on low speed. It will make a dry crumbly mixture. Press firmly in pan and bake for about 20 minutes or until light golden brown.

Maple Pecan Filling

In a large bowl combine:
2 heaping Tablespoons cornstarch
Pinch of salt
1 c. sugar
2 eggs
1 c. pure maple syrup

Stir together thoroughly. Add 2-3 c. *chopped pecans. Pour over baked cookie crust. Spread evenly. Bake about 25 minutes or until filling is set. Cool completely, if you can wait to eat it that long. Cut** into small squares.

* I started by stirring in the 2 cups. After pouring the mixture over the dough I sprinkle pecans wherever there is a spot with none.
**I find it easier to cut the square while the cookies were still warm, not hot than when totally cold.

Kim! hahahha! Did you have a hard time getting them out of the little muffin tin? Boy I sure did.

Maybe I'll make more of these little things for T-giving too.

Shaun, I should have reported sooner...I made the minis to take to Disney last week. I didn't have sticking problems, wonder what I did wrong.

They were super--Beau ate 12! Here is Beau with his "Bug's Life" eyes.

Just took these out of the oven, was planning on freezing them....guess I'll have to make more. These PP muffins are wonderful. Hubby picks up one every time he crosses the room. :O)

I had made some in a silicone pan and some in a nonstick pan, well they were sticking a little in both, more so in the silicone when my husband suggested to let them cool a little more. He was right:) No problems after that. I probably just wanted to eat them too soon.

Shaun, I'm adding these to my list of things to make for all of the company I'm/we are having for the next couple of weeks. Thanks to friends with pecan trees in their yards I get them for free.

Cathy, that little guy looks like a load of fun...I want to go to Disney with y'all...I'll pass on the tea cup ride thought..lol! Spikes favorite back in the day....

Ann, I made your Maple Pecan Pie Squares today and they are delicious. It's a big recipe so I am able to freeze some for Christmas. I followed your recipe perfectly and the squares cut and lifted off the baking pan without a problem.

I am munching on one now. Thanks for the delicious recipe.
