Pork in Milk

I don't think I've ever posted here, but I recognize some of the names from Kitchens (this is where you've gone, johnliu!). I have a cooking question.

After reading Michael Pollan's "Cooked" (wonderful, BTW), I was inspired to try maialo al latte (pork cooked in milk). Although I'm Italian by descent, I'd never heard of this. I found the recipe from Samin, who worked with Pollan, and I halved it. It was good - the pork was very moist and tender - but not as incredible as I was lead to expect. The sauce formed curds, but it turned only light beige, not a caramel color. I cooked it for almost 4 hours.

So my question is, has anyone else ever made this? What color did your sauce turn? Maybe I didn't have the heat high enough to caramelize the milk?
