What to use my buttermilk in?

I've got a carton of buttermilk that I bought for a cake recipe a while ago. I have to use the rest up asap.

Besides fried chicken which I don't really want to do at this time, what other suggestions do you have?

Pancake batter or mashed potatoes, two of our favorites, Use in anything that uses milk and it gives your dish a little extra tang, which I like.

In my last kitchen I had Caesarstone champagne limestone countertops - we had espresso colored cabinets. The countertop color gave a warm feeling and was a good combination with the cabinets. This time around we are going for a more modern/contemporary look and are doing slab front walnut base cabinets with clear gloss and opted for Caesarstone organic white countertops. This recipe from the Atlanta Journal/Constitution calls for two cups of buttermilk. The only change I would make is that the gelatin in two tablespoons water sets up really fast, so wait until you are ready to add it to the cream mixture. Virginia Willis' Buttermilk Panna Cotta With Blackberry Coulis 6 servings Hands on: 20 minutes Total time: 6 hours, 20 minutes Although the Italian dessert panna cotta translates as "cooked cream," in fact, you heat the heavy cream only long enough to dissolve the sugar and the gelatin. When testing the Rock Cream, it occurred to chef Virginia Willis that the dessert seemed very much like a panna cotta in taste and consistency and inspired her chef's version using buttermilk for a Southern flair and a garnish of blackberry coulis. 2 tablespoons water 1 (1/4-ounce) envelope unflavored gelatin 1 cup heavy cream 8 tablespoons granulated sugar, divided 2 cups whole-fat buttermilk 1 tablespoon pure vanilla extract 1 pint blackberries, divided 1 tablespoon Chambord, optional (or water) Pinch of salt Put 2 tablespoons water into small bowl; sprinkle in unflavored gelatin. Let stand until gelatin softens, about 10 minutes. Combine heavy cream and 7 tablespoons of the sugar in heavy medium saucepan. Stir over medium heat until sugar dissolves and mixture is hot but not boiling. Remove from heat; add gelatin mixture and stir until gelatin is completely dissolved and mixture is smooth. Transfer to a medium bowl and place over a bowl of ice water. Stir constantly to cool, 5 to 7 minutes. (Do not allow the gelatin to congeal.) Stir the buttermik and vanilla extract into the cooled cream mixture. Pour mixture into 4-cup measuring cup. Divide mixture among six 3/4-cup custard cups or ramekins. Refrigerate until panna cotta is set, at least 6 hours and up to 1 day. Meanwhile, in the bowl of a food processor fitted with the blade attachment, puree half the blackberries, remaining 1 tablespoon sugar and Chambord (or water) with a pinch of salt until smooth. Strain through a fine mesh sieve to remove the seeds; set aside until ready to serve. Run thin sharp knife around sides of each panna cotta to loosen. One at a time, place bottom of each custard cup in 1 inch of hot water 30 to 45 seconds; immediately invert custard cup onto plate. Using both hands, firmly grasp custard cup and plate together, shaking gently and allowing panna cotta to settle onto plate. Spoon reserved coulis around the panna cotta; garnish with remaining blackberries and mint. Serve immediately. Per serving: 288 calories (percent of calories from fat, 48), 4 grams protein, 34 grams carbohydrates, 3 grams fiber, 16 grams fat (10 grams saturated), 57 milligrams cholesterol, 138 milligrams sodium.

Knock-Your-Pants-Off Sweet & Spicy Glazed Buttermilk Meatloaf Serves 6 For the Glaze: 1 cup ketchup 1 cup barbeque sauce 1/2 cup brown sugar For the Meatloaf: 1/3 cup panko bread crumbs 1 cup whole-fat buttermilk 1 tbsp. olive oil 1 clove garlic, minced 1 cup small-diced onion 1/4 cup chopped fresh parsley 1/3 cup chopped fresh basil 2 tbsp. tomato paste 1 1/2 lbs. ground beef (85% lean-15% fat) 1/2 lb. ground pork 1 cup grated parmesan cheese 1/2 tsp. salt 1/2 tsp. ground pepper Heat oven to 425 degrees. Combine the glaze ingredients in a small saucepan and place over low heat. Heat olive oil in a skillet over medium heat. Add onions and garlic and cook until soft and translucent (try not to brown). Add parsley, basil, and tomato paste and cook for about a minute. Set aside to cool. In a small bowl, combine Panko and buttermilk and set aside for 5 minutes. Then in a large bowl, place beef, pork, cheese, salt and pepper, the onion mixture, and the panko mixture. Mix with your hands until just combined. I would say No, I would use equal amounts buttermilk as milk, same measurement. But, you have baking powder in your ingredients so please read this: If you find buttermilk's tang appealing you may want to replace some or all of the milk called for in certain recipes. When using baking powder, however, take care in substituting buttermilk for regular milk as it upsets the balance of alkali to acid. Buttermilk has more acid than regular milk, which will reduce the carbon dioxide released and thwart the leavening process important to these recipes. To achieve the desired result when using buttermilk instead of milk, be sure to substitute baking soda for some or all for of the baking powder. For each cup of buttermilk used in place of sweet milk, reduce the amount of baking powder by 2 teaspoons, and replace with 1/2 teaspoon of baking soda. *And I should add I'm hardly a professional baker, just my untrained opinion. I just finished a cake using buttermilk, and it called for soda not powder. Old recipe, tried and true.

It lasts for months- many months after the use by date- so you don't have to rush it.
I use it mainly in biscuits, waffles and pancakes.

I didn't even think of pancakes. duh.
I'll whip some up tomorrow morning. It's amazing how I drew a blank when I realized how much buttermilk I have to use up. Mashed potatoes, too. And I make biscuits, haven't used bm in them before.

Don't have my files as I am not on my computer....b ut those angel biscuits.
And it works to replace some of the water in most yeast breads.
I can use a quart pretty fast!

Here's my recipe for buttermilk rolls that you might like.
The link will take you to a thread on them with other recipes too.

Buttermilk Refrigerator Rolls

1 Package dry yeast
1/2 cup warm water
1/2 cup melted butter
4 1/2 cups all purpose flour
1/4 cup sugar
1 tablespoon plus 1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon soda
2 cups buttermilk

Dissolve yeast in warm water in a large mixing bowl. Let sit 5 minutes. Stir in butter

Combine dry ingredients; add to yeast mixture along with buttermilk.
Stir well. Turn dough out on a floured surface, knead gently a few times and shape into a ball. Place in greased bowl, cover, and refrigerate until needed. Keeps for one week.

My first thought was buttermilk ranch or green goddess salad dressing.

GREEN GODDESS BUTTERMILK DRESSING

1/3 c. buttermilk
1/4 c. sliced green onions
1/4 c. chopped parsley
1/4 c. chopped watercress
2 t. lemon juice
1/2 t. dry tarragon
1/2 t. anchovy paste
1/2 c. regular or reduced fat mayonnaise
salt and pepper
In a blender or f/p, combine buttermilk, onions, parsley, watercress, tarragon, lemon juice and anchovy paste. Whirl until herbs are finely chopped. Add mayo, whirl just until blended. Season with s&p. If made ahead, cover and refrigerate for up to 10 days. Makes about 1 cup.

This is a good everyday kind of cake. I usually don't frost it.

PRUNE CAKE

1/4 cup soft butter
1/2 cup sugar
1 egg
1 cup flour
3/8 tsp. each of salt, ground cloves, nutmeg and ginger
3/4 tsp. cinnamon
1/2 tsp. each of baking powder and baking soda
3/4 cup buttermilk
1/2 cup diced moist-pak prunes
1/2 cup chopped walnuts
1/4 cup golden raisins

Cream butter and sugar together. Add egg and beat until light and fluffy. Sift together flour, spices, baking soda and powder in another bowl. Add to creamed mixture alternately with buttermilk, beginning and ending with dry ingredients, beating well after each addition. Stir in prunes, raisins and nuts.

Turn into greased 8 inch square pan and bake at 350 degrees for 25-35 minutes or until cake tests done. Cool in pan on for 5 minutes; then move pan to rack to cool completely.

Ruthanna, those refrigerator rolls sound wonderful! Anything yeasty.....I'm there!

I think this is my project tomorrow. The pancakes can wait!

hmmm I made some rolls to have ahead of time. They didn't get up. I didn't knead them, just pulled chunks off and rolled into balls. Do you think it's best if they're kneaded for a bit then formed?

I have always rolled them out and made crescents so that is a sort of kneading and I would knead some if you don't plan on shaping them. Try making the crescents though, they're really good that way.

Kneading won't help.....either you are not waiting long enough or your water was too hot and you killed the yeast.

Linda, I made it last nite and it rose great! Nothing wrong with the yeast.

Bumble, I cut some rounds this morning and folded them in half and boy did they ever puff up! I ripped some more chunks off and just made them into balls for dinner, and they didn't rise.....they tasted fantastic though.

I'm wondering if it needs to rise full over night again, before ripping off any more sections.

Also, when it calls to punch down every day, do I punch it down and then make my rolls, crescents, etc?

What to use my buttermilk in?
