Thanks to Linda, I get mine directly from Maytag in Iowa. I just got a wheel last week and I've been wanting to ask LindaC if I can make ahead and freeze the blue cheese cookies.

Blue Cheese Cookies? This sounds like something I need to make. Cathy, do you have the recipe?

LindaCÂs Blue Cheese Cocktail Cookies

Ingredients:
1 3/4 cups flour
3/4 cups chopped pecans
8 ounces Maytag Blue cheese
1/2 cup butter
2 egg yolks, beaten
2 teaspoons fresh ground black pepper

Instructions:
Combine all and mix with hands until smooth. Roll into 2 x 1 1/2 inch rolls, wrap in plastic, and chill 4 hours or over night.

Slice into 1/4 inch slices, and bake 425 on un-greased sheet for about 10 minutes until lightly browned.

I am surprised that it's hard to find in So Cal.
Just remember....800 247 2458!!
But if you can find it in a store....it'll be cheaper. The groceries here charge $18.99 for a 2 pound wheel.

Linda, Another question--how many cookies does this recipe make?

I haven't tried Lin's recipe but it reminds me a lot of a delicious one at Epicurious called Walnut-Roquefort Shortbread. The epicurious version makes 36 rounds.

1½ cups unbleached all purpose flour
1 cup walnut pieces
½ pound Roquefort cheese, chilled and crumbled
½ cup (1 stick) well-chilled butter, cut into small pieces
2 egg yolks
1 tablespoon freshly ground pepper
Preparation
Blend all ingredients in processor until dough forms. Divide dough in half. On lightly floured surface, form each piece into 1½ inch diameter cylinder. Wrap and chill until firm, at least 4 hours. (Can be prepared ahead and refrigerated 3 days or frozen 1 month).

Preheat oven to 425 degrees F. Cut dough into 1/3 inch thick rounds. Place on ungreased baking sheets, spacing ½ inch apart. (Let frozen dough soften at room temperature 20 minuets before baking.) Bake until edges are golden brown, reversing position of baking sheet once, about 10 minuets. Transfer to paper towels. Serve shortbread warm or at room temperature.

If we are talking the same recipe....2 sticks of butter and about 6 oz of blue cheese....it makes about 100 crackers.

I picked up a third of a pound of Maytag Blue today. It's $18.99 a pound at Whole Foods. I think I need to remember 800 247 2458.

I'll be making Lindac's Blue Cheese Dressing this weekend & expect lots more from when I made it with just regular old blue cheese. :)
