Would you compare: Port Sunlight and Pat Austin
Comments (3)I have both of them. Pat Austin repeats for me fairly regularly and is several years old, I think about five years now. It has a nice orange and yellow color, but the flowers do not take heat well. It just wilts in temps in the 90s. The bush want to get rather large. Port Sunlight is new for me this year. I had it in a pot, but I put it in the ground to be grown on a pillar. I suspect it will be tall. It is also on the spindly side, but still, it is only its first year. The color is a nice apricot, but it fades badly in the sun, almost as bad as Tea Clipper. The flowers are also little bigger than a miniflora rose. I had hoped for better. They do smell good, a plus. I will withhold judgment on this one pending a couple more growing seasons. Lady Emma Hamilton and Carding Mill are both more than viable alternates. They bloom regularly and have contained growth habits. Both are in the same general apricot/orange color groups, and both are fragrant. Also pending is Summer Song. One I have has not bloomed yet, and I am supposed to get two more. If you want in-your-face orange on manageable plants, the floribunda Impatient and the shrub Kordes' Brillant are also good choices....See MoreI got one too - a surcie that is!! Thanks Pat
Comments (13)Sally, Pat was kind enough to send me a cookbook bt Persian Author Najmieh K. Batmangli called A Taste of Persia Compumom and Anni - recipe follows. I ran two cups of basmati rice through my Nutrimill to grind it into flour. For the recipe you will need 3/4 cup room temp syrup made by boiling 1 1/2 cups sugar with 1/2 cup water. You can save or discard any extra. You will also need 1 cup Ghee. I made this by melting 1 cup butter in a saucepan, covering it and simmering for 18 minutes. Then strain through muslin (I used my yogurt strainer) and cool to just solid. 3 egg yolks 1 Tbsp Sugar 1 cup Ghee or clarified butter 1/2 cup corn oil 1 1/2 tsp cardamon 3 cups rice flour 3/4 cup surup 2 Tbsp Poppy seeds Combine egg yolks and sugar and beat till creamy In another mixing bowl, combine butter, oil, cardamon and flour. Mix well for a few minutes then add yolk mixture and beat for a few seconds. Add the syrup and knead well for a few seconds or until the dough no longer sticks to your hands. Allow the dough to rest for 30 minutes at room temp. Preheat oven to 350. Line baking sheets with parchment. Roll dough into balls the size of hazelnuts, flatten slightly and place on cookie sheet leaving 2" between cookies. Stamp cookies with design using fork (I used a disk from my cookie press) and sprinkle with poppy seeds. Bake 10 - 15 minutes (I did 12 in my Miele on convection). Cookies should still be white or very slightly colored when done. Allow to cool and carefully remove from trays. They crumble VERY easily. NUSH-E-JAN! (which I think is Persian for Bon Appetite - I will ask SIL)...See MoreBaking sheets
Comments (29)LOL, Lars, now that you said that, it DOES look like a toupee! Tracey, those are lovely roses, you are getting quite good! Nancedar, I also smiled when I saw the cutting of dough with dental floss. A million years ago, in Home Ec, my teacher told me to cut cinnamon rolls with fishing line. I promptly went home and told Grandma and she tried it and promptly went right out and bought herself a roll of 25 lb. test, LOL. A couple of years later I mentioned dental floss and was flatly told that it was FAR too expensive to use to cut dough and that her roll of fishing line would last her for the rest of her life. I think it did! dcarch, the problem with that explanation is that others have posted how they roll out dough on the silpat and it comes right off like a charm. Mine doesn't, so why does it work for them but not for me unless they dust with flour like Lars does? Not that it matters, I've rolled pie dough on the counter for my whole life and it works fine, but I always like to see if I can find something faster, neater, better. Of course, I can't get that microwaved corn to shake out of the husk either, and I can't flip a pancake in the pan without a spatula and I can't get the egg to separate with a water bottle, although others can make all those things work. I guess I'll stick with what works for me and as you can see from the picture, rolling pastry on a silpat sure isn't one of them! I'll bet it would be great for no-bake cookies though.... Comments (28)When you mentioned 'thin as a lace cookie, pliable and sticky," I thought along the same lines as Carol_w_fl. Too bad none of us were there to see where exactly your cookies took a turn for . . . the better ☺ First, I would find out if the 'light' butter used might've been vegan 'butter' (whose main ingredients are vegetable oil and water). In which case, I would avoid adding more water to your recipe, because while adding more liquid will make the cookie spread, it will also make it too delicate. Replicate every step you remember, except, reduce the amount of flour by half. But keep the 3 cups of oatmeal the same. To avoid 'ruining' an entire batch of cookies, prepare the recipe as indicated on the Quaker Oats box, but reserve half of the (combined) dry ingredients, and set aside. Then, add only half the flour mixture to the butter/sugar/egg mixture. Bake only one or two cookies (on parchment paper) to test for consistency. You should get what you're looking for. If not, add the reserved flour mixture to the cookie batter, and proceed as directed. But, if you end up with another happy mistake, you'd better build a wall around it. Sol...See Morejessyf
