Non wheat base for lemon curd tartlets?

I want to take a treat to a friend who temporarily has to avoid wheat. She adores lemon. I thought I could make graham cracker cups, oops, wheat. Ditto filo cups or egg roll skin cups.

So I'm wondering about a meringue base? Or a ground almonds + something binding? Anybody have an idea? Thank you.
