Making Fresh Pasta - Cavatelli

I've been making fresh egg pasta for a while now; usually northern Italian pasta dishes.

I'm going to venture into the south with cavatelli, and noticed a few people on Youtube use just water and '00' flour, and others use eggs and a pasta mix (semolina + '00). I have been using a pasta mix imported from Italy.

Have any of you tried making pasta with just '00' flour and water? How does it compare to your pasta with eggs? What about semolina + '00' and just water?

I suppose I'll find out for myself tonight when I experiment, but wanted to get your opinions. Feedback welcome!!!
