I'm not brining my Turkey Breast. I've used this under-the-skin rub in the past, and I'll be using it this year. Herbed Turkey Breast Ingredients: Bone-in turkey breast 3 Tbs lemon juice 2 Tbs olive oil (divided) 2 garlic cloves 1 1/2 tsp salt 1 tsp lemon zest 1 tsp dried Thyme 3/4 tsp pepper 1/2 tsp rubbed sage 1. Loosen skin from turkey, leaving attached along bottom edges. 2. Combine 1 Tbs lemon juice, 1 Tbs oil, garlic and seasonings. Spread under turkey skin. 3. Combine remaining lemon juice and oil; set aside. 4. Place Turkey on rack in roasting pan. Bake uncovered at 350 degrees, basting every 10-15 minutes. Let stand 10 minutes before cutting. (Bake to 170 degrees). Bonnie

Thanks everyone. Yes, I used an oven thermometer. It's an old one (the standard metal frame) and I have no reason to think it's off, since setting the oven 25 degrees lower seems to work almost all the time.... and NOT setting it lower tends to burn/brown the food too much (though I haven't tried that for a long while....). In addition, I always put the rack in the middle of the oven (unless the recipe says to do otherwise), then put the thermometer in the middle of the rack on which I'll put the pan, and wait until it registers at (or very close to) the temp I want. And, yes, the breast was cold when it went into the oven -- I made the herb paste in the morning, spread it on, covered with foil, and put it in the fridge. I wanted to go for a bike ride and didn't want to cut that short to come back and prepare the turkey; all I'd need to do is stick it in the oven. No doubt, letting it sit at room temp for about an hour would have made a difference in cooking time. I bought it fresh, not frozen, and kept it in the fridge until cooking time. (I removed the foil except for the last 30 minutes.) So, next time I'll let it sit for about an hour at room temp before cooking, then let it reach 165 degrees before removing it from the oven. This was Ina's recipe and tried and true so I'm going on the assumption I did something differently. It wasn't overly dry.... a little on the dry side. The flavor is great and I would definitely make it again, but not for company until I get this right! I also made the dill potatoes (posted here before), and brussel sprouts blanched then tossed w/ EVOO and drizzled with finely chopped walnuts then roasted in the oven. Hubby (who does most of the cooking since he's retired and I am still working) said "This is really good, Hon." .... then, after dinner, "Good job!" Well, I ran out of time yesterday to cook it in the crock pot, so I ended up roasting it in the conventional oven. First of all I should point out that the breast weighed 1.75#, not the 2.75# I gave in my initial post. Anyway, here's what I did: I followed Linda's guidelines (thank you, Linda) but at Compumom's temperature (350F). In a large roasting dish, I placed the half-breast on a nest of thinly-sliced onion (1 large onion) and several peeled garlic gloves. I seasoned the breast with S&P and I few other savory seasonings I like, topped with a several dots of butter over the skin, and popped the dish in the fridge until ready to heat up the oven. Meanwhile, I cut 3 large (the size of baseballs!) red potatoes into chunks tossed them with a little olive oil and dried rosemary - just enough oil to lightly coat the potato pieces At baking time, I poured 1/4C dry white wine and about as much chicken broth (both at room temp) around the breast (not over it) and placed the potatoes in the bottom of the dish around the breast. Covered loosely with a foil tent and baked about 1.5 hours (I checked after 1.25 hours but not quite done). Removed from oven when temp reached 165F with instant-read thermometer, let sit 10-15 minutes with foil tent. The meat was extremely juicy and tender. The thin slices of onion caramelized in the wine/broth/juices and created a delicious sauce for the potatoes - as well as being tasty to eat. (There were a few thicker slices that didn't caramelize; next time I'll be sure ALL the slices are thin - they'd also be a nice addition to a turkey sandwich the next day.) Next time I may add a bit more liquid to create a bit more juice, but really it was fine as is. I still maintain it's possible to make a juicy tender delicious turkey/chicken breast in the crock pot --- if done correctly --- and I plan to give that a whirl sometime soon. I've found several recipes on-line with very favorable reviews to indicate they are worth trying. Thank you all for your suggestions and input! PS - I wanted to add brussels sprouts (halved) with the potatoes but was afraid this would increase cooking time. Will that work, all together in the same dish at the same time? The potatoes went in with the turkey and all turned out fine.

Whether bone in or boneless, I cook it the same way. Shove a ton of herbed butter under the skin(I like sage,chives and thyme for a turkey),heavily season the skin with salt and pepper,and roast that sucker. I have long wanted to try Ina Gartens turkey roulade(minus the fruit) but finding a whole,boneless skin on turkey breast has proved almost impossible around here. And I couldn't debone one myself, it would be shredded...
