Beet salad for thanksgiving?

We have a big extended family get-together for Thanksgiving. (Fortunately, it's not at my house!)
I usually take several things........one of which is roasted vegetables. But I'm tired of taking that. My daughter is Vegan and my son is Vegetarian, so I like to take at least 1 side dish that they can eat too.
I make a marinated beet salad for our christmas meal and it's really good.
But I was wondering........I usually serve it in cupped Bibb/Boston lettuce leaves. I was thinking it might be neat to serve it this way at Thanksgiving. But I would have to make a big platter of all these single servings. And I don't think it would travel well and I'd probably have to put it all together there.
But maybe it would just be better on a bed of some times of lettuce? I'm just trying to think of the ease of taking it 60 miles and ease of serving it, etc.
Plus.....do you think this would be an appropriate dish for Thanksgiving?
