Making my first pumpkin roll

I finally got energetic. My DD always makes my late MIL's pumpkin cream roll. DH loves it. So I decided today I was going to make one. Cake is out of the oven and rolled in the towel, now cooling in the oven. Filling is next. And maybe some pumpkin cookies.

The pumpkin roll is now chilling! DH will taste test later. Since I had pumpkin left over, I made these pumpkin cookies. They are supposed to be iced, but I won't. I really don't need the extra sugar, but the cookies would taste better with it.

You can use 3 tsp pumpkin pie spice instead of the asst spices listed.
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup butter, softened
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg
1 teaspoon vanilla extract 2 cups confectioners' sugar
3 tablespoons milk
1 tablespoon melted butter
1 teaspoon vanilla extract Directions
Preheat oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside.
In a medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.
Bake for 15 to 20 minutes in the preheated oven. Cool cookies, then drizzle glaze with fork.
To Make Glaze: Combine confectioners' sugar, milk, 1 tablespoon melted butter, and 1 teaspoon vanilla.
Add milk as needed, to achieve drizzling consistency.

Here is a pic of the cookies. I got 44 out of the batch. For the pumpkin roll, I will dust with powdered sugar later.

Here's a little update on my pumpkin growing adventure. After a few days of non-growth the boys are back on track. Spike has taken over the lead in the growth department. Stats: Circ. 44' OTT 30' & 30.5' 104.5 OTT= 32# weight. Not earth shattering, but for a twenty-day old pumpkin, not too shabby. The others, Pancho and Lefty are a little behind. The image shows Spike with some of the foliage pruned away. In the foreground are giant sunflowers, about 9' tall now with no heads yet. I have switched to foliar feeding every other day using 'Monty's Joy Juice' (yep that's the name.) I couldn't find the Neptunes Harvest. Monty's seems to be working pretty good as well. It is a late season feed that comes in at 2-2-15. I also blend in a little molasses for added calcium and micronutrients. Here is a link that might be useful: Monty's Joy Juice

The dabbing you did to the female flower was almost certainly successful. Just a gentle dab or two, here and there, is plenty. I sometimes worry that I'm damaging the female structures with too much agitation, but it all seems to work out OK. I would just suggest a few light dabs are plenty, as long as the male flower is visibly dusty with pollen grains before you start. I don't know if pruning the tip will help. It will certainly encourage the growth of side runners. I would just make sure to cut off any more female flowers. I like to let them open and have their day in the sun just so the bees can have their fun. Hey, if you want the bees to work for you, you've got to provide them with the goods.

Pumpkin and orange are great together... Other things to consider might be flavoring the frosting with a little Frangelico and adding some chopped hazlenuts. But I think I would do orange. Trader Joe’s carries Pumpkin Butter in the fall. People rave about it. I bought some last year and didn’t care for it. To me it tasted more like pumpkin pie spice and not enough like pumpkin. I love apple butter and it was nothing like it. The consistency was too thin, also, more like a sauce: it would slide right off whatever you put it on. I was on a local gardening forum and someone was talking about making her own pumpkin butter from the pumpkins she grew. It looked so much better and thicker than the Trader Joe’s version that it got me thinking in that vein of how to use my pie pumpkins. (I buy a couple to use on my porch for Halloween, then eat them after. The first year I did this, it was so thin it was good only for soup.) She’s the one that cooked it down in the slow cooker to make it thicker after roasting. Using it in quickbread is far more likely than in any other form. I had a pumpkin cinnamon scone a few weeks ago that was really tasty.

My son has requested a pumpkin roll for Thanksgiving this year. I love them too, but hadn't made one in years til last Thanksgiving. Looks like it may become an every year requirement now. I have a recipe for Pumpkin cookies I was going to try, but may try yours instead. I don't know that I've ever had pumpkin cookies before, but they sure sound yummy.

Ngraham, the cookies are very good, but really do need the icing on them.

DH approved the pumpkin roll! It must be close enough to his mothers LOL! I'll be taking DD and a DN some later. It was much easier than I expected it to be.

Tami, hooray for your first pumpkin roll. It is surprisingly easy, isn't it? I'm always sure it's going to crack or stick or something, but it never does.

Tami, I'm so glad your pumpkin roll turned out so good. I tried to make one many years ago. The cakey part wound up cracking and coming apart and I gave up. Maybe one of these years I'll try again.

LOL Annie! I rolled my share around the yard, and maybe over the hill when it was time to get rid of it, so new ones might grow the next year. But I didn't kick it over, cause the fence was in the way.
