What is the shelf life of flour?

I usually go through flour pretty quick, but I have some whole wheat and better for bread flour that I have had for awhile. I just don't know how long it lasts. I don't store it in the freezer.

Flour keeps 6-8-months, possibly up to 12-months, at room temperature (70-degrees F.).

Ellen, I think yours has gone bad. You better not chance it, send it to me and I'll dispose of it properly. Depending on how it's kept - open bags/air tight buckets - will have a lot to do w/ it. The heat is going to be more detrimental than the cold. If this is the only storage option you have I'd limit the qty to one or two years supply. Or maybe find a neighbor to help split the cost. Wheat stored in air tight canisters is supposed to be good for 7-8 years. I've made bread from my moms wheat storage that she bought a ton of in the 70's and it tastes great. I don't know if it still has all of the nutritional value though. I'd think high N stuff like alfalfa and kelp meal would not keep as long as grain.

Dry fertilizers are fine as long as they're dry, and the packaging doesn't show signs that they were wet at one time. Liquid products are fine as long as the product isn't separated into layers. But that's obviously a difficult thing to determine with today's opaque plastic containers. When it comes to pesticides, I wouldn't buy them if I don't yet need them. But it's a great time to buy tools! Beyond that, since moving to the NW, I've learned that garden centers hereaabouts are strongly seasonal in their marketing. Most will soon clear out to make space for holiday and gifty stuff.

Thanks again for all the input, everyone. After sharing some jars from my test batch I can definitely say that I'm going with the low-sugar this year. My main reason for wanting it was simply the amount of sugar in the normal Ball recipes - I tend to give away quite a bit of what I make and the only complaint I've recieved, quite regularly, is that it's too sweet. The reduced sugar level definitely lets more of the fruit flavors shine through, without the overpowering taste of sugar. For reference, I used the recipe in the box, 4 cups black raspberry juice (from ~1.5 quarts of berries and enough water to come halfway up them in the pan) and 3 cups of sugar - Yeild was around 2.5 pints...I could have probably got some more, but I didn't realize how fast this stuff jels up. Normally, after finishing the rolling boil, I let it sit for about 2-3 minutes - this way the foam forms a kind of "skin" and is much easier to skim off - The low sugar set so quick that I lost nearly a quarter of a pint just in skimming th foam. ...Will be clearing out my freezer this week and making up some jelly - Should get around 10-12 pints each of black raspberry and blackberry with what's in there now, and yes, I will be firing up the water canner. Thinking about taking some down to the local farmer's market as well to see if the owners would be interested in selling any. -Thanks again for the info, I do appreciate the comments and concerns...

You should toss it. However, strange observation. I'm incredibly sensitive the the flavor of peroxides. I've had bag of planters peanuts that were too rancid for me to eat, even though the expiration date was well in the future. (Btw one of the reasons Hubs are so tasty is they fry them in a mix including coconut oil, which is very oxidation resistant almost to the point of acting as an "antioxidant", and it helps to preserve the natural flavor of the peanuts) However I was making a lot of pizzas back around 2010/2011 and bought too much whole wheat flour, especially the KA white whole wheat. Some of it I froze, but I still have some that's now almost 3 years old. I do keep it in a snap-closed plastic container. That probably helps. But I still make pancakes using that, and I swear, there's not a bit of rancid taste at all. I've even smelled and tasted the raw flour to be sure. Nothing, zilch, nada. I think maybe the fact it's enclosed as well as the density of the flour limits the degree to which oxygen can get in there: oxidation require an oxygen molecule be around, after all. (Unless I were subjecting it to pure chlorine gas...but that's pretty uncommon in kitchens LOL)

I just bought some KA flour with a 10/29/12 "best by" date, so I'm guessing a year sounds about right.

Whole wheat has a much shorter shelf life because of the wheat germ. I'd give it a good sniff before using it. It goes rancid.

I'm in FL so I keep it in the freezer (that side of the freezer will have to be emptied because of cooking ahead for the big day). Hope the weather turns a bit cooler.

Hi,

after trying to find out which long storage food kit may fit my needs, I review four of them there, possibly this can help.

If anyone think about family safety, have food reserve for each of family member is must and freeze dried food with 25 years shelf life IMHO is one of the best choices for long storage.

Of course if anyone know better choices, I think that all of us would like to hear about alternatives.

happyday, I know that first message with link to web page may look like spammy, but I tough that is better share something useful with community as just say plain "hi".

I have garden, generally fruit trees, some flowers and old northern grapes, not much, but enough for our family eat some bunches of tasty self grown grapes at autumn and if year is good, also make ten or a bit more bottles with wine from leftovers. Some topics on wine making bring me there.

Yes, English is not my first language as You note, but I try :)
