Any one here that likes rice for breakfast?

I like creamy rice for breakfast, kinda odd for a southerner I know.

I usually cook it in chicken stock with some milk.

Recently I bought some sugar cured country ham that was on sale.

It is very lean and tough when fried. Too salty also!

On a whim, I chopped some up, about 4 ounces, and put it in my rice cooker to brown.

I added 1/2 cup of rice, 1 cup of water, and 1/4 cup of evaporated milk. No salt since the ham was salty!

Then I just let the rice cooker do it's thing!

OMG! The ham is tasty and tender! It is perfect! At least on my taste buds!
