Arepas! Silvia - need your expertise!

Silvia - I am hoping you can provide a good recipe for Arepas. I have a friend who has discovered she is gluten intolerant. She enjoys the Pork Arepas from one of the lunch trucks in Minneapolis.

Can Arepas be made and frozen? And the batter be made and refridgerated like pancake batter?

Any tips and recipes for my friend Leah would be appreciated.

I make arepas about once a month. Split, wrap in foil (pop-up sheets) and freeze the extras.

This is my go-to recipe because it includes a little protein from the dairy in the recipe. I use drained homemade kefir curd for cream cheese.

CREAM CHEESE AREPAS
Ingredients (makes 4):
1/2 teaspoon salt
3/4 cup milk
1/4 cup softened cream cheese
1 tsp sugar
1 cup P.A.N. arepas flour

Video and instructions found at the link below. I make them in a pan. There are recipes for arepas on the package of P.A.N. (pre-cooked white corn meal flour).

Of course a woman with the name Grainlady would come to my rescue! The Whole Foods as well as a number of other stores sell the PAN white corn flour. I will watch the video - I've seen a couple already. The amount of fat varies greatly. I'll take your word that these will be good!

I have a Brogdon about 7 foot tall in a pot I got last spring. It's my best looking tree i got, and it lost about i/4 of it's leave over winter. The Brogdon is a Mex./W.I. mix and it might not do good in Texas cold winters but it looked so thick and dark green I had to buy one. I don't water it untill the bottom of pot is dry, I drill holes on the sides of the pot and checked it with a long wooden dowel. Out of the 7 Mexican types I have in pots, the Mex. Fantastic looks 2nd best. This year I hope to plant them all this May 2014 and see which do best here in south Texas. OM89, that makes sense for what you're actually growing, your area must be much more like Silvia's. I've given up on growing squash in containers, they don't do well and I've come to the conclusion that although the roots don't appear substantial they are runners and need lots of space so that would account for them not doing well in a SFG. Also, what Lou says about the squash is true and I have to be at work by 6:00 A.M., by the time I get home in the afternoon all the morning flowers from the squash are already too spent to hand pollinate. The last two seasons I've tried two varieties of parthenocarpic squash but they didn't do well either. Now, the parthenocarpic cukes were another story, they did very well inside my swiming pool cage where I didn't have to spray for pickleworm, the quick nemesis of my garden cukes since the garden is only 8' from the lake...very buggy down there until we finally get a cooling off period overnight. I keep my tomato plants well spaced from each other due to the gardens proximity to the lake, extremely humid too, and I never have blight and rarely other fungal diseases because of good air circulation around each individual plant, so for me "less is more" but I do see Silvia's plants up against each other so for you that might not be a problem. Christine, I agree with you that the shipping costs make them expensive, that is why is a good idea to share the bag with other people. In my opinion no single product is better than other, it all depends on the condition of the particular garden and I also think that not one single solution is 100% foolproof, only fresh soil is. If you combine a few things it also works. I did cover crops in Arizona and I planted right on top tomatoes and it worked for me, it was more to use a thick mulch for heat reduction, again different solutions for different gardens. Here with the nematodes it works the starvation diet, do not feed them! from time to time it is a good idea to treat the soil and let it rest. Doug, the crab meals are a good source of nitrogen, my neighbor in NY liked to fish and used to bury the fish heads deep in the soil to plant tomatoes. However when using anything like that, you have to be careful not to attract other unwanted creatures, nothing can smell. Here I will be even concern on the neighbors.:) Silvia

Hi Here is a pic of the night flowering white . It is growing in a pot in a carombola tree . As you can see it gets rather long lol.. i also grow some in a cluster of areca palms . Most of the others are in hanging pots including the holiday cactus . I want them to attach to the trees and though they produce aerial roots they never attach !! I saw some C. cactus growing wild in Costa Rica but couldn't get close enough to determine how they attached but were in forks of trees where debris collected never just attached to the limbs like orchids and Broms . All are very easy to grow IME. just need good drainage . Have always wanted to get some of the larger day flowering types but always had some other project going. All the ones I have i got from cuttings from neighbors . Good luck gary

Hi Teresa

Thanks to Grainlady you have a good recipe, I have been reading some of her posts and she always has good info.
I don't make arepas or tortillas but maybe once in a while. Like tortillas there are many different kinds and recipes. They are very popular in Venezuela and Colombia and some have cheese and others don't.

Teresa - Your post reminded me that I got a Corona Mill for corn last Christmas, I better start using it,lol.
It also reminded me that when I lived in India for a while, I loved the fresh breads there , the ones made with chickpea flour or the crispy ones papadum made with lentils. I also like the Ethiopia injera bread. Your friend has a lot of tasty options!

I posted on my "Tricks & Treats" thread about this interesting nut "caltrop" which is also known as water chestnut, buffalo nut, bat nut, devil pod, Singhara or Eurasian water chestnut.

I discovered it when I had to help a gluten intolerant friend.

From the WEB: [The main ingredient in my gluten-free naans is water chestnut flour. This flour is called singhare ka atta in India and is eaten by Hindu ladies on festive occasions or fasts, in place of a gluten diet. It is also an important ingredient in traditional Chinese cooking.]

I have the nuts in my freezer, I may try to make arepas with the flour.
