What's the difference between brined and processed turkey?

For years I have been looking at sodium info for Thanksgiving turkeys, trying to avoid turkey with high sodium counts because I don't like the mushy texture and salty taste.

Turkey brining is very popular and it recently dawned on me that many people are buying turkeys injected with sodium water and then they are soaking them in sodium water. I realize that you can add extra flavor in the brine but why add extra salt?

I understand if you have an unprocessed turkey that a brine will make a difference. But Butterball sells a lot of turkey. Surely there are people out there adding sodium water to a sodium saturated bird,
