Cracker trouble, designer grains?

Made crackers last night, again. Trying some new things. Adjusting the temp a bit from an earlier batch. Just want to get this perfect for x-mas gifts. The first one, herbs, worked fine but a bit brown on the edges. The next one was the spicy. Fantastic, nice spice and rich like a cross between a cheese nip and wheat thin. But the next few started smelling like poop. Like dog poo when rolling out. Very earthy and stinky.
I've started grinding my own grains half to flour and leaving a bit as a 'grainy' grain. I've got Farro, Freekeh, quinoa, chia, hemp hearts, flax,etc, all sorts of seeds and nuts. Not much care that they are 'in fashion' but i think its super they are available locally and at a reasonable cost.
Family on both sides are so loving my crackers and i hear about the ones i sent a couple years ago and want more or at least the recipe. So i'm experimenting and plan to give Danish dough whisks, some made crackers, but also a dry mix to make their own...
But the stink....i'll pay more attention with the next batch. Could it be the hemp? I've searched the net and nothing mentions hemp having such a smell. quinoa is earthy. Maybe it is the combination. Hmmm
The herb batch did not have hemp...nice rosemary and savory aroma. But does have flax and chia and some corn flour.

It may be the hemp. I've had problems with them when they aren't "fresh". I think the oils in hemp go "off" and degrade quickly after it's processed.

Ironically, I sometimes think peanuts or peanut butter powder can take on an "odd" smell - almost like a cigar smoke, during baking.

I've baked with pounds and pounds of chia seeds in all kinds of things over the years (I always keep at least 5-pounds in storage), and have never found them to be a problem. The oil in them is so stable at room temperature.

Is the corn flour fresh? I always mill my own to make sure the germ doesn't go rancid. I once made "corn chips" (really more like crackers) using pulverized freeze-dried corn in the batter, and it was an interesting experience. At the time, I was experimenting with making snack food using crushed freeze-dried vegetables.

Raw sunflower seeds can get stinky if they aren't fresh.

One of the simplest recipes I made was a mixture of 2-cups water and 1-cup whole wheat flour (you can use other whole grain flours if you'd like). You can add any kind of seasonings:
-1/2 t. each onion and garlic salt or powder
-1 t. salt or vegetable salt substitute
-3-4 T. parmesan cheese
-taco seasonings, sour cream and onion, powdered cheese (The Spice House has a number of them, or you can find Kernel Season's Popcorn Seasoning in White Cheddar or Cheesy Jalapeno - and maybe some other flavors - near the popcorn) Grill Mates Barbecue, Mrs. Dash Salt-Free Southwest Chipotle......

Stir the ingredients together and pour it into a squirt bottle (an empty honey bear, a mustard or ketchup bottle, etc.). Spray a baking sheet with PAM. Make a circle with the liquid mixture about the size of a potato chip, then fill in the circle with more of the mixture. The ring helps to set the size and prevent it from spreading. Just cover the surface, don't be too generous. Put the lid (or your finger if there isn't a lid) over the opening of the bottle and give it a shake occasionally to keep the ingredients in suspension.

You can sprinkle these with sesame seeds just before popping them in the oven. I also like to put Nigella and a little coarse salt in a salt mill and add a couple grinds of this on the top of the batter.

Bake at 350-degrees for 10-15 minutes, or until crisp. Check occasionally and turn the pan if necessary.

You can use this same mixture (whole wheat flour and water) and season the batter with a pinch of salt and a little sweetener of choice - maybe a shot of vanilla or other flavoring.... Bake as above and break the "chips" into smaller pieces when crisp and use it for cold cereal flakes.

The thinner the batter, the crisper the chips.
A wholegrain pancake mix would work well with the Danish Dough Whisk. \-Grainlady

I was hoping you would chime in. Everything is fresh and kept frozen. Then ground just before.
I do 'rest' the dough overnight in the fridge. It does make a difference in the marriage of grains.
I just want this to be perfected. And i did nail the spicy one. The reason i invest in the Ozeri scale.
I'll be even more careful next time since this was so successful.
Even my husband said it smelled 'skunky/earthy/poop-ish'.
The 'scent' is gone after baking. Nice aroma in the home now of fresh baked grains.
Such a learning experience, yet a good one.

I'm curious why it's an either-or situation. Why not use both? If you compost them, the result is likely to be close to neutral either way. Unless the spent grains are really out of whack for pH, I don't think they'll change the pH much if used directly. There are probably differences between the two. If I had access to spent brewing grains, I'd use them.

When you have a digestive challenge you'll find soaking or sprouting grain before consumption will aid in easier digestion. Soaking/sprouting allows enzymes, lactobacilli and other helpful organisms to break down and neutralize phytic acid. The simple practice of soaking cracked or rolled cereal grains overnight with some whey, kefir, buttermilk or yogurt added to the soaking water will not only make the grains easier to digest, but it will improve their nutritional benefits. The soak neutralizes enzyme inhibitors. During the soaking and fermenting, gluten and other difficult-to-digest proteins are partially broken down into simpler components that are more available for absorption. Oats/oatmeal may be low in the hard-to-digest gluten protein, but oats contain more phytates than almost any other grain. So if you have digestive problems, pre-soaking all grains, especially oats, would be very important. Freshly-milled whole grain flour can be made into a gruel and the gruel used as a base for a smoothie, instead of a fruit/dairy-based smoothie. You can add all kinds of things to your gruel-based smoothie. If you don't have a grain mill for this process, you can use a coffee/spice mill for milling small amounts of grain into flour (barley, brown rice, wheat, kamut, spelt, rye, etc.) and mill it as needed because FRESH IS BEST. To make 2-cups of Gruel: (source: Nourishing Traditions - by Sally Fallon and Mary G. Enig, Ph.D.) 1/2 c. freshly ground organic flour from spelt, kamut, rye, barley, wheat, rice or oats 2 c. water plus 2 T. whey, yogurt, kefir or buttermilk 1/4 t. salt Mix flour with water mixture, cover and leave at room temperature for 12-24 hours. Bring to a boil, stirring frequently. Add salt, reduce heat and simmer, stirring occasionally, about 10-minutes. Let cool slightly and serve with cream or butter and a small amount of a natural sweetener, such as raw honey. ------------------------------------------------------- Add ground flax seeds (flaxmeal) for more nutrition and fiber. Flax seeds are relatively low in phytic acid and when taken in small amounts do not require soaking. Mill them in a coffee/spice mill so you have the freshest source possible, plus they are less expensive. I'd also suggest adding chia seeds or chia seed gel (chia seeds mixed with water) to this gruel smoothie for additional fiber and nutrition and the great health benefits from this simple little seed. Chia seeds are easy to add to water or other beverages. A common drink used with them is called "fresca" - 1 glass of lemonade and 1 t. chia seeds - allow to sit for 10-minutes before drinking. I realize lemonade would be too acidic, but that's an example of how to add chia seeds to your diet - in any kind of beverage - just allow to sit for 10-minutes. Another add-in that would raise fiber AND aid in digestion is High Maize Resistant Starch. We add all three of these to our morning smoothie. Add water, juice, dairy, if necessary, to make the smoothie texture. --------------------------------------------------------- Have every tried crumbling baked goods in a bowl and pouring milk over it. Lots of people crumble cornbread and top if off with buttermilk and I thought it might work for wholegrain muffins or cake. This recipe is a nice wholegrain snack cake that might work crumbled. Just omit the topping and the nuts in the recipe. BANANA CRUNCH CAKE (Source: The Quaker Oats Wholegrain Cookbook) Crunch Topping: 3/4 c. Quaker Oats (Quick or Old-Fashioned, uncooked) 2 T. butter or margarine, melted 2 T. chopped nuts 1/2 t. cinnamon Cake: 1/2 c. butter or margarine 2/3 c. firmly packed brown sugar 1 c. mashed banana 2 eggs 1 t. vanilla 1 c. ground oat flour* 3/4 c. all-purpose flour (use whole wheat or spelt flour) 1 t. salt 1 t. soda 1/2 c. chopped nuts, if desired For crunch topping, combine all ingredients; mix well. For cake, beat together butter and sugar until light and fluffy; blend in banana, eggs and vanilla. Gradually add combined dry ingredients, mixing well after each addition. Stir in nuts. Pour into greased 8-inch square baking pan; sprinkle with crunch topping evenly over batter. Bake in preheated moderate oven (350-degrees F) 40 to 45 minutes or until wooden pick inserted in center comes out clean. *How to make your own ground oat flour: 1. Place 1 to 1-1/2 c. oats in blender or food processor. 2. Blend or process for about 60 seconds Yield: about 1 cup ground oat flour 3. In response to the original poster's statement: you do not *need* an enormous amount of protein to start your day. In fact, one does not require a large amount of protein per day at all. Rather, this is a gross exaggeration on the part of various "how to get fit" diet books. What you need to kick start your day is a lot of vitamins and micronutrients with some good sugars. To do this, I usually mix about 1/3 of a pineapple with 1/2 a mango in some orange juice, then embellish with a variety of other fruits or berries such as banana, cranberry, strawberry, raspberry, blueberry, kiwi, or really any fruit that would taste good with the pineapple/mango base. The fruits are a good kick start (especially the banana and pineapple) because they are natural "feel good" fruits that contain a little bit of caffeine (*dramatically* less than in coffee, and far far less than even in green tea, but present and functional!). They will literally make you feel awake, aware, and alert. If you are a busy-body and don't get around to lunch often, it's important to add some healthy fats in with this shake either in the form of a splash of olive oil, or more ideally, a heaped tablespoon of coconut milk (preferably with no preservatives, but that's a rare find these days). Mix this all up in a blender until smooth (or you could eat it all raw, but that takes a long time and you're looking for a quick fix). "But what about protein?" Well, first of all, fruit has more protein per calorie than meat or beans do. That's because a lot of what's in a fruit is water or calorie-free minerals and the like. As such, your body is packing on fewer pounds per unit of protein it is extracting. Secondly, you don't WANT a bunch of *excess* protein, because this negatively impacts your overall health and has been linked with heart disease, early stage diabetes, and a variety of dermatological pathologies, most notably acne and cellulite. Moreover, you can add a raw egg yolk or two (be sure to mix the min with a fork rather than the blender as the friction with the blades is sufficient to cause heat denaturation of the fragile amino acids in an egg yolk) to your drink. Egg yolks are loaded with natural amino acids as well as good HEALTHY cholesterol (as opposed to 7-ketocholesterol). On days when I do not work out and have a light schedule, I have found that this one meal keeps me full for basically the full day without making me feel bloated or 'stuffed.' For a creamy alternative to coconut milk or olive oil, try peeling and pitting an avocado and sticking it in with all the other fruit. It sounds gross, probably, since avocados have such a thick texture on their own, but blended in with fruit it makes the whole smoothie taste like you added a shot of cream or ice cream to thicken it, and is one of the most pleasant add-ons to a recipe I've ever tried! Finally, I have been on this diet for around 2/3 of a year and have lost 60 pounds (I'm convinced I would have lost more if I had been more overweight, but I'm now at an ideal weight for my height, build, age, etc.). More importantly, my level of energy has increased, my attention span (which was not bad to begin with) has improved, my IQ is measurably higher, and I feel more alert and oriented than I ever have in my life. I should note that when I was younger I was an athlete, and I feel more fit than I did as an NCAA division 1 rower. As such, I can't see any draw backs to this diet, as it has done nothing but make me healthier, happier, and keener. It's done the same for friends and family who have tried it. Up to you what you want to do with it, but either way I applaud you on your decision to eschew grains or dairy as they are addictive, noxious substances that cause you to eat 10% extra calories, resulting in obesity or chronic health conditions. I went through the very same process as you, Paulope, and I live in Oklahoma, which is supposed to be wheat country. However I live in the NE part of the state which is mostly cattle country. I ended up getting my best results by talking to local bakery owners, one of whom belongs to a co-op and got a couple of buckets for me when she got hers. Then I paid her for them. This is the best deal I've been able to find. I talked to the County Extension office, our local health food stores, and compared prices at various websites. I tried to contact the folks at the LDS church, but no one answered the phone. The next best price, even with shipping that is as much as the product costs, is Heartland Mill in Marienthal, KS www.heartlandmill.com . There was a whole long thread that Grainlady posted on with lots of helpful information, including her wonderful whole-wheat bread recipe and a method posted by someone who soaks the wheat and then processes it in a food processor, about a month or two ago. It was either on this forum or on the Money Saving Tips forum. Grainlady is a great resource on this topic and doesn't seem to mind repeating herself to folks who missed the previous discussions, but reading previous posts can be very educational. By any chance are you using heartshorn or Ammonium Carbonate (aka Baker's Ammonia) in your recipes? This leavening is often used in recipes you want to be crispy (Springerle and Pfeffernusse - aka Peppernuts). It smells during baking, but it's a strong ammonia smell, so pee, not poo. Your dilemma is curious, at best.

I wonder if there is a bit of fermentation going on during the refrigeration - but that's thinking WAY out of the box.

Not WAY out at all. I though the same thing but having made these often...now using more variety of grain, something changed in the 'wet' resting. Maybe?
Both our families want the grains. Not all are 'hippie', just want the taste and the fresh.

I might get to it on saturday as the weather might keep us inside.

Sleevendog, your crackers that didn't smell like dog poop, sounded really good. They are something I've been wanting to try. Especially since so many commercial crackers use so many things that aren't good for you.

Very easy cracker to make. The difference i am finding, is in the temp in various ovens.
How they cycle the heat on/off.
I've been pre-heating 400, then immediately turning down to 275 when they go in. I just bake a bit longer and all the crackers go back in after cooling, to further 'dry' them, with the oven off for a few hours.
Just ground some grain this morning while making coffee. (the testing i've been anxious to solve)
And made a spice mix, mustard seed, tumeric, paprika, etc....i'll add sriracha with the wet ingredients...

I built a 10 tray dehydrator last August. Yes, it would work for this. I was using the convenience of holiday prep and oven heat, even the oven cycling off, shifting that tray of crackers around.

So part two.
It's a barnyard again. A tidy one. With hits of new mown hay, after a damp day.
It is now becoming somewhat pleasant. I think i was using too much ground seed and nut flours. My kitchen is looking like a science lab. That scent, and the fresh sweet pea humus.
Smells like spring! The colors! Bright green humus with chive oil and rich pale orange crispy crackers...

Next round i will leave out the hemp and flax completely. See if i miss the 'barnyard' aroma.

So interested in this. Please keep us informed of what you find caused the 'poo' smell.

Can you share more about the Ozeri scale? The only scale in my house is an antique scale that belonged to Alfred's grandmother. I've been thinking about buying a newer scale, but have no idea what to buy.

Thanks for sharing. I really want to grow more of our food and I'm learning so much from your posts.

That was easy. I just went to my Amazon purchase list. I chose this one for its size, thin and flat...and looks...I'm a sucker for good design. Most important are the reviews. (i'd put up with ugly and just store it away,lol) The 11lb is only 22 dollars. I went with the 18lb so it can double as a scale for packages if i need it.
Recommended to be stored flat. I've never stored it. It is on my side counter as a paper weight for lists, important mail, etc. I'm using it much more than i thought. Curiosities.
Like how much final volume did the last batch of humus weigh compared to store bought.

DH want me to pay more attention during prep and amounts added. I tend to wing it.
