Help with Pies

Am trying to learn to bake pies although still haven't the nerve to try making the crust. Found a recipe in ToH for an apple pie that calls for 2-1/2c sugar for 9c of apples (plus 2t sugar for the crust). While I thought that seems a lot of sugar hadn't the knowledge to cut back, and, using no special brand of apples, the pie is definitely too sweet for us even though we both have a sweet tooth. How can one tell in advance if the amount of sugar in a pie is appropriate and/or can you share a T&T recipe for apple or any kind of pie? Many thanks.
