Ginger cookies with a lemon glaze?

Posted by teresa_nc7 (My Page) on

Last night I bought some good Carr ginger lemon creme cookies at the store - a sandwich cookie with lemon creme in the middle. They are sooooo good!

So I wondered if anyone had a good recipe for ginger cookies (gingersnap like, but better than commercial) with a lemon creme filling that I could use as a glaze. I've made molasses cookies with ginger in them many times, but I've not made a gingersnap style cookie. These would be great for gifts nearer Christmas.

Thanks for any help!

RE: Ginger cookies with a lemon glaze?

I can't help with the cookies but this frosting I use on lemon cookies would probably work. Sometimes I frost the whole cookie and sometimes jut plop a dab on top, as in the photo. I would add some grated lemon peel if I was using them with gingersnaps.

1 cup confectioners sugar
2 Tbs. melted butter
1 Tbs. lemon juice
