Herb Shears vs. mincer

| Which is better for fresh herbs - shears or a mincer? I've always used shears and a friend of mine says a mincer does a better job. This got me curious about what other people think. |

Chef's knife unless I am doing a huge amount....like 2 cups of parsley....then I use the Food processor. Linda C |

| Herb shears? What about my good old Joyce Chen kitchen scissors that I use for everything else? Are there special herb shears? I use scissors or a knife or the FP, depending on type or herb and quantity. |

| [blush] I have some herb shears--a birthday present. They are scissors, but with 4 or 5 blades on each side. They give even, short cuts of chives or garlic chives and I use them when I'm taking trouble with garnishing a plate, but there's not much other use for them. Not recommended. A chef's knife is the thing. |

| Scissors mainly for me, though for large quantities I use a food processor. For medium lots, one of the handiest gadgets for chopping herbs is a pizza-cutter! Surprisingly effective. Lay the herbs down on a chopping board, and run the cutter back and forth, up and down, side to side, diagonally. Quick and easy. No mincer - I've got one, and find that it's main purpose is to gather bits of herb between its blades which you have to dig out. |

| If I have only a small amount, I use scisoors. Larger amounts get the knife. Really large amounts go in the mini-processor. |

| Here is another that just uses a knife for chopping herbs. Have tried the herb scissors at work, not really all that impressed with it. I'm faster with my knife. NancyLouise |

| A Kyocera ceramic chef's knife (6" blade) used on a wooden cutting board. Far superior to any other knife on the market for chopping herbs and other slicing/cutting kitchen projects. I have owned mine for three years and use it 90% of the time and it is still as sharp as the day I purchased it. |

I use those little short bladed scissors for snipping the herbs from the garden.....and a knife to chop. The scissors work well on flowers too! Linda c |
