Possible to over-bake Apple pie?

What happens if you "over bake" an apple pie? Does crust just keep getting darker the longer it is in the oven? I'm considering baking apple pie in a 12" ceramic pie plate. I usually bake in Pyrex where I can see the bottom crust. I've been known to under bake in a smaller ceramic and the "vodka" flavor didn't quite bake out of the crust. So - what happens if I leave the pie in the oven a little longer to try to ensure the bottom crust is done?

The pie is a lattice crust so I guess I could partially pre-bake the bottom crust but I've never done this.

Years ago I bought a 12" pie plate at Sam's and have never used it. I thought maybe I'd try one 12" instead of making two separate pies.
