A Cookie Confession...

I am a self proclaimed baking snob. I only use King Arthur flour, I have way too many exotic ingredients on hand, can fairly accurately guess cocoa content, and I will only bake with butter. But that may all be for naught as my new favorite cookie has none of these things. But it is good. Sinfully good.

Not sure of the name; taste a heck of a lot like girl scout tagaglongs:
Ritz crackers
smooth peanut butter
melting chocolate tabs (or almond bark)
tsp of vegetable oil
Sandwich peanut butter between two crackers. Place in fridge for 30 min. Melt chocolate and add the oil if too thick. Dip each pb sandwich. Allow to set.
These are really great.

I know, I love those things! I've made them for years & people can't believe they are made from crackers. Even worse, I love those Nutterbutter cookies dipped in chocolate or white chocolate, & they are so cute in the white chocolate as snowmen or ghosts :) If I remember right I've tried just using a Ritz cracker dipped in chocolate flavored with peppermint oil that were good. Gotta use the oil though, extract makes the chocolate separate or something.

Jojoco - my best friend, Pattee, makes these EVERY year to exchange with me for my home-baked goodies. Aren't they just the best? She calls them "Pattee Poos". LOL

Like Linda, I don't like peanut butter either. Wonder how they'd be with almond butter or hazelnut buter. Hmm-m-m-mm-m-m. . . . May have to try that. Rusty

How about if you put a bit of caramel on top of the peanut butter? How long would these be good after you make them you think? Freeze them, put them in the fridge, fine on the counter? They probably won't last long regardless....
