What to do with Pork Belly Trimmings

I just finished preparing 50 lbs. of pork bellies for curing. I am making bacon for X-mas gifts. In the process of preparing the pork bellies, I trimmed them square. I have about 4 lbs. of meaty trimmings uncured. The pieces are good size not scraps, Any ideas for usage other than bacon ends or salt pork? A recipe maybe? Thanks.
