Baking soda....who knew

DD and I made my aunt's ginger cookies last week for a bake sale. (Chocolate chip too). Of course we were talking lots, having a good time. And a 4 year old helper that she is baby sitting.

We forgot to put the baking soda in until after the first tray was in the oven. So the rest went back in the mixing bowl (I had already started rolling the balls for the next batch), and we added it in.

What a difference in flavor! The ones without soda came out nicely rounded on top, but not crackled, and sort of flat tasting.
The ones we added the soda to, came out flat and crackled as in the photo, but much more flavorful.

I never knew baking soda could change the flavor of baked goods.
