Its Wed. AM, start cooking for T day yet?

I am!

I have the potatoes on the stove for mashed potatoes. I will reheat them tomorrow in a crockpot. I am trying something new as I hate to peel potatoes. I made a cut through the skin all the way around each potato. I idea is after they are cooked to punge them into ice water and pull off the skins. Since the potatoes are for tomorrow I don't care if they get cold. I coudn't seem to get the cut even all the way around so hoping it will work anyway.

I also plan to pre cut up the ingrediants for the sweet potato

oh the pot just boiled over. I really need an induction cook top.

....as I was saying.... cutting up ingredients for sweet potato stuffing which will be done in a crockpot tomorrow.

hmmm I wonder if I can try the same method to peel the sweet potato????

I also plan on making today, mock mashed potatoes which are made with cauliflower. My mom loves cauliflower (gag). Reheat tomorrow.

Dh is making pineapple stuffing not sure if he will do it tonight or tomorrow.
