| Eandhl, opinions vary on this. The local farmers in my area usually slaughter the turkeys 3 or 4 days before the holiday and they often want you to pick up your turkey the day they are slaughtered. The best turkey I ever had was one I picked up on a Tuesday and didn't roast until Saturday. I presalted it 48 hours in advance. I stored the turkey at about 36°F. Also, even fresh turkeys that are purchased from grocery stores usually arrive the week before the holiday and when they are gone they are gone. So even if you wait until the day before Thanksgiving to buy your fresh turkey chances are that the turkey you bought would have already been in the store for almost a week and just kept at a temperature slightly above freezing in a back cooler.
