Uses for shellfish stock

I know all our Southern friends here are in Thanksgiving mode, but hopefully I can distract you for a moment for a little help.

I had been saving shrimp and lobster shells in the freezer for quite some time, and finally got around to using them to make some stock yesterday. I now have about 5 liters of shrimp stock and 8 liters of lobster stock in the freezer. I'd like to use it up over the next few weeks.

What do you think would be the best way to use it up? Some chowder? Gumbo?
