How can I improve this bread recipe?

Hi,

I have this bread recipe that produced a good looking texture but quite a bit dense and dry in taste despite 70% hydration.

2 Cups Whey (derived from making cottage cheese) (300ml)

1 Cup + 10 Tbsp Whole Wheat Flour (205g)
6 Tbsp Millet Flour [1/2 +1/2 red + pearl mearl] (45g)

1 &1/2 Cups Plain AP Flour (170g)

1 & 1/2 tsp Salt

1 & 1/2 tsp Active Dry Yeast

1 Tbsp Honey

around 2 tsp of olive oil used for kneading and greasing loaf pan.

Bread baked @ below 200 deg C after first rise in loaf pan itself.

Any tips on how I can tweak it to make it a little more light and airy? (Without eliminating the whole wheat & millet flours).
