Corn Pudding

I have been trying a number of corn dishes none of which I like very much except for a Jacques Pepin corn gratin recipe. That one was not bad.

However, I am going to stick with a recipe I have been using for some ten years now. I seldom make this except during the holiday period. It is simple but suits my tastes quite nicely.

Hilda Crockett Corn Pudding

1/2 - 1 cup sugar
3 tbs cornstarch
2 eggs
1 pinch of salt
1 16 oz creamed style corn
1 13 oz can evaporated milk
butter

Preheat oven to 350F.

Lightly grease a 1 1/2 quart casserole dish.

Combine sugar and cornstarch in medium bowl. Add eggs, corn, salt and milk and mix well. Turn into baking dish and dot generously with butter.

Bake until center is almost firm, about 1 hour.
