Can I use any Winter squash instead of Butternut Squash

I found three very large winter squash at Wallmart & would like to cook them after Halloween.

Must I know the name to use them in the recipe or will any large winter squash work. I have grown & cooked Butternut squash before, but not the big white,orange or green type.

I found the #14 cookalong, will it work for these WS?

jolj, the winter squashes are pretty much interchangeable, with each other and with pumpkin. There are variations, of course, in taste and texture, but those are negligible when used in recipes.

Butternut is one of my favorites, it's more dense, creamy and sweet than Hubbard or acorn types. I've used them all, though, in bread, in "pumpkin" roll, in muffins and in pancakes. They all work.

Just cut a small piece out and cook it and taste it. You may be able to figure out a recipe for it.

I only have this year to base my observations on and they didn't quite line up with what I had read. I have a long row of C. moschata with a couple of C. pepo at the end. The pepos are nominally to be a trap crop for the squash bugs since I had read that they were preferred over the moschatas. The moschatas are an experiment to see how well they stand up to svb. So far both sets of plants have been visited by both types of insect. There were pretty much the same number of adult squash bug found on both varieties on a daily basis, so it didn't seem like they preferred the pepos. The pepos have now collapsed from svb, and I haven't bothered to try to save them having had my annual dose of summer squash. They were always destined to be trashed anyway. The moschata have evidence of svb damage on the stems but are not (yet anyway) collapsing. So moschatas being svb resistant? Check. C. pepo being preferred by squash bugs? Doesn't seem like it this year. Bu tlike I said, it's only one year.

I've dehydrated butternut and hubbard type winter squash before, and it makes a pretty worthwhile product. After drying, it can be used a couple of ways, either rehydrated and cooked and mashed, etc., as normal, or also, the dry powder can be added direct to soups and stews to thicken and flavor them, in pasta sauces, etc., or in bread or pasta doughs to color and flavor them. Butternut pasta made with one part of powdered butternut squash to 3 parts of semolina with an egg added, when cut into fettucini or put through a pasta maker, is excellent and a very pretty golden/pale orange color. Blue Hubbard is a Cucurbita maxima. I thought Butternut and Tahitian were both C. moschata, but some pages say Butternut is actually C. mixta. Maybe the species have been redefined since I was in school. Anyway, as far as I know, the different species can't cross. I don't know what the barrier is.

I ate my first spaghetti squash last week. I'm going to try to grow some next year. I saw seeds for single serving size squash at Park Seed, and since there are only 2 of us, that sounds like a good idea, since the bowl I tried reheating was not great. We sliced it in half, scooped the seeds put garlic & butter in it and popped it in the oven. Next time, I won't put the butter on before cooking. It seemed to make it mushy. Other than that, I really liked it. Next time, we'll cook it plain, add garlic, butter and parmesan cheese, then pop it back in the oven for a minute to melt the parm. I cooked the seeds too, like pumpkin seeds, but I cooked them in the frying pan instead of the oven, just to try it. They were good too. I planted my zucchini too close this year (to each other, and to everything else). Next year, it's not going in the raised bed. It's getting some space of it's own. Of course like a dope, I thought it was a vining plant. I've only grown it once, and that was several years ago. I just though - zucchini is squash, squash grows on vines... Lesson learned... We did get some very good zuchs though. About one a day for several weeks. My potatoes were looking great until I left town for a couple weeks. DH overwatered them. They got hit when the sprinkler system came on, and he didn't realize it. As they yellowed, he watered them more, thinking they were dry. I salvaged a few that hadn't rotted. My carrots were less than stellar. I grew Danvers half long I think. They weren't sweet at all. All in all though, the new raised beds I built this spring produced by far the best garden we have ever had. DH didn't want me to garden this year (first year in the house, too much work he thought, so I built it while he was gone to TX for 2 weeks). I had 80 square feet this year. Next year I'll have about 200, plus a raspberry patch. DH is happily helping me this time : )

I agree with Annie on the interchangeable part....but I prefer hubbard to butternut.
There really are lots of varieties of winter squash....all of them with subtle differences.
I find acorn stringy, butternut a little dense, some delicata a little watery, hubbard HUGE and sometimes stringy, Marina del chioggia has a bit of a smokey taste....and I am still searching for the elusive galleux....said to be the sweetest and most delectable. And it must be, a friend gave me one and I left it outside for a bit as a fall decoration and the critters ate it up!!
In spite of stringy, watery etc...I love all winter squashes!!

Yes, I agree with what others have said. Butternut squash is winter squash, as are the others that have been mentioned. Pumpkins, I guess, can be considered winter squash, too. If you have spaghetti squash, it's cooked basically the same, but sometimes treated a bit differently, used as a substitute for spaghetti. But, of course, it can be seasoned and flavored the same as other winter squashes, too. I love them all!

Kabocha for me has the best texture and sweetness.

Great for pies, soups, etc.

I know that butternut is a winter squash.
But it is the only one I have cooked & I want to use the 3 I have & save the seeds. No way of knowing what I will get, because the Cucurbita family crosses so easy.
Alton Brown of food net work says that squash makes a smoother pie then Pumpkins do,he said that no one will know
the differences.

Well, I just re-read your post and saw that I misread it (seems to be going around). I thought you thought butternut squash was different than winter squash, but clearly, that's not what you said. Sometimes I should read posts several times before replying. I'm such an idiot.

I should have said "Can I use another Winter Squash in place of Butternut squash".
I just want everyone to know that I know all hard shell squash are winter squash & not summer squash. The squash, Gourds, Luffa, cucumber, melons & cantaloupe are all in the same family tree.
I have tried spaghetti squash & hope to grow it next year.
