Kale and Stir Fry Question

I'd like to make a stir fry kind of dish using kale, different vegetables, soy sauce and that tube shaped pasta. What kind of seasonings would I use besides soy sauce? Would I simmer the kale in water first? I'd be buying a bag of small snipped pieces without the stems. It has to be vegetarian so I won't use chicken stock or boullion. If I add a little cabbage, would small snips have to be cooked in water first? Or the shredded carrot?

Deeby: I make stir fry all the time and about the only veggy I use that I feel could stand some blanching prior is cauliflower.

I also feel that I can't really get good flavor in my stir frys without making a sauce with a mixture of soy sauce, hoisin sauce or any other number of stir fry sauces, maybe some sambal oelek(chile paste) and some cold water and cornstarch.

But to get back to your original question... No, kale doesn't need anything except to be chopped and some of the thick stem removed. I just chop it off where the foliage actually starts.

About the only SPICE I ever use is just a LITTLE of chinese 5 spice and some red pepper flakes or dried chiles. Other than that, I rely on garlic, onions, and ginger to flavor.

I agree with Kevin - all you need to add are garlic, onions, ginger, and chili. I use fresh red chilies instead of sambal oelek, but either will work. I sometimes also add lime juice and/or lemongrass, both of which I get from my yard. I also have cilantro in my yard, but you really do not need that with kale or cabbage.

No need to simmer anything before stir frying, and if you want it to be more done, simply cover the pan and let it steam. Instead of macaroni, I would add bean threads that have been soaked. I've never put tube shaped pasta into a stir fry, but I have used rice noodles and bean noodles.

It is more often called Walking Stick cabbage. Popular in Europe. In the US it is called Tree collard. Forgot to answer your question re: freezing. Squash - I frankly don't bother since they're available year-round in the supermarket & I feel that once defrosted the texture is miserable. Just enjoy them while you have them in the garden. Eggplant - Doesn't freeze well raw or blanched. Gets mushy, dark grey, & gruesome looking. However - if you dry the slices or cook it in a dish first (eggplant sandwiches, lasagna, parmagian, etc.), it freezes just fine. Beans - Blanch in boiling water for just a minute or 2, drain well. You can then just pack in plastic bags, excluding as much air as humanly possible, pack in vacuum-seal bags, or spread on a tray to freeze individually & then pack in bags - again, remove as much air as possible. As for peppers - sweet peppers I usually wash, core, seed, & dice or cut into strips, dry well, pack into plastic bags & freeze. No blanching. Hot peppers I just wash & dry well & freeze whole in plastic bags. Frozen peppers won't thaw out crisp, but work perfectly fine in cooked dishes, sauces, salsas, & stirfries for flavoring. It's also incredibly easy to slice & seed the hot peppers in their semi-frozen state. Hope this helps you.

Mary, I'm very happy with my 11" cuprinox style fry pan. But like you, I've spent time reading all the cookware articles. If there is one pan in your arsenal that you want to be thick and heavy, it would be the frying pan, (at least for some cooking). I think the Demeyere Atlantis skillet would be a great choice because it is lighter,(than copper or iron) but still thick and would never warp at high heat-thanks to the stainless. Good cookware will sometimes make up for a less than perfect heat source. I have a powerful gas range with nice big star shaped burners, so I don't really need the thickest pan. But if you were to sear a steak with a weak burner, you would like a nice thick pan to hold more heat - once you preheat it. Otherwise, the meat would 'suck' the heat out of the thiner pan, before the burner could catch up and supply enough heat to get it hot again. I remember you saying you weren't sure on what you were cooking with, but wanted a good fry pan that's not too heavy. I think the Demeyere would be a good choice, I don't own it but I've seen the fry pan and it looks good.- should be easy to clean and is induction capable. I like the inside silvernox finish as well. Price is tough to swallow, but I saw one on sale that was the floor sample at a Sur La Table store...- so if you look long enough? What do I think about the All Clad copper core stuff? It is bomb proof, and I'm really impressed with it. It's not induction capable, and it's not particularly light (because of the copper). Total thickness at the edge, even with all those plies is not very thick. My guess is that the Demeyere Atlantis would do better as a fry pan, even without the copper, because the aluminum is so thick, - while remaining fairly light. Sure copper heats a little faster.. but the race isn't always won by the fastest and fry pans are one item that thickness and therefore heat capacity is just as important.

Stirring is moving ingredients around a pan for a better mixing of ingredients and to even out cooking, while tossing is to flip all ingredients upside-down to brown the opposite side. "Your first quote could be read as being inconsistent as well. First it says the wok will "allow heat to distribute evenly and prevent the formation of hot spots" and "the sloping sides distribute heat evenly among the food being cooked", That explanation is not a thorough explanation. If you look at the cut-away photo I posted of a wok on a stove, you will understand better what is going on. The quote should have said the design of the wok allows GRADUATED temperature evenly spread out from the hot center to the colder edge of the wok. This is an important feature of the wok. It allows the following: a. It allows the chef to perfectly control temperature for each of the ingredients. b. The round shape of the bottom also allows the wok to be tilted to shift the hot center to other areas. "---So if we can agree on the latter, it would seem we need a lot of movement to get even results. And if the home range isn't powerful enough to give a proper sear with this method, then a wok is a poor choice for the home, wouldn't you say? ----" Based on the above and the Chinese style of cooking, uniform heat distribution is not required or desired. Is that term used in Chinese? ;-)" I saw on TV sometime ago Jacques Pippin was cooking something. He mentioned that sauteing actually came from stir frying. I have not tried to verify that information. In a wok, you can fry food in oil and then push the food to the side to drain off most of the oil. Great for making crispy bacon, something you cannot do with a flat pan. You will be soaking you food in oil, fat or butter. The shape allows cooking very small quantity to very large quantity. There is a round grill attachment that goes on the wok for deep frying. It drains the oil right into the wok. This works much better than draining oil on paper towels because oil flow much easier when hot on top of a wok. A wok's unique geometry lends itself to many other interesting uses. Pasta wouldn't really work with a stir fry. Pasta is made from durum wheat, which has a very different flavor from noodles that are made with bread wheat.

I would add some crimini or oyster mushrooms.

If you're going with tube shaped pasta, after stir frying, add just a bit of veg. bouillon to the pan and braise for a few minutes. Then add white beans and basil, garlic, oregano and thyme and a splash of red wine. Then add some cannellini beans. Top with parmesean. I do this all the time. Or go greek, using a splash of lemon juice instead of wine, oregano, dill and cinnamon, just a dash, along with dark red kidney beans. Top with feta. Or go Spanish, add fake chorizo or fake italian sausage, garbanzo beans, smoked paprika, lots of garlic and some oregano and use the red wine. OK, I'm working my way around the Mediterranean . . . or go Tunisian and use red beans, ras al hanout, garlic and lemon. They sell various Moroccan blends at the store, or Google it to make your own.

Regarding your cabbage and carrots, I stir-fry shredded carrots, cabbage and sliced onions regularly. We love it. No pre-cooking necessary.
