Use them as you would chicken eggs.

Eggs are eggs. From quail to goose, duck to chicken.

(At least, fowl eggs are fowl eggs. I dunno about other eggs, reptile etc)

I LOVE duck eggs!

But I've rarely used them in baking,
Because I'd so much rather just eat them!
They 'work' just fine in the few things I have baked with them,
Mainly cookies & muffins.

I've used both duck and goose eggs for baking; they make great sponge cakes :-)

I used to have a good friend who had ducks for his children to play with and learn from and I ended up with many of the surplus eggs. The eggshells were extra hard and were an attractive pale green to blue. I used some for Easter eggs one year. I often used them for fried eggs. They tasted like eggs. It has been at least 15 years but as I recall, the yolk was more orange and stood up more than the large chicken eggs I was normally using then. Many of them were extra extra large. I don't recall any unusual response when I used them for bread baking.

My next door neighbor and a more distant acquaintance have chickens and I sometimes get their eggs. The neighbor's eggs appear almost identical to store eggs, but some of the distant chickens must be different because the shells are extra hard and large like the duck eggs. They all act like eggs.

Used to teach GED & ESL classes. Community college campus had a nice pond that attracted wild ducks and dreaded Canada Geese! Had a sweet, little Chinese lady who got VERY interested in where the geese might lay their eggs. First told her that I didn't think it was LEGAL to take the eggs... even though the geese are pretty much considered POOPING PESTS. Then told her they can be darn MEAN & NASTY... BUT then this was a woman who grew up in some little remote village in China, so bet she'd win a fight!!

I love duck eggs.... if the ducks free range, the yolks should be a deep orange and the eggs will be flavorful. Eggs are eggs, enjoy!
