I'd like some info on sprouted garains

I'm considering making Ezekiel bread. Or just a good, high fiber, whole grain bread. I'd like to use sprouted grain. I looked at the sprouted grain at Whole Foods, and didn't see any difference between it and any other grain. I didn't see any evidence of it having sprouted. Is this right? I believe the grains are dried after they sprout, so maybe once they're in the store, it's hard to see evidence of sprouting? And I'll have to mill them to use them, right? Can anyone recommend an inexpensive starter mill?
